The main difference is in the method it's made. A corned beef starts in a brine then is simmered in liquid until it's cooked through, where as Pastrami also starts soaked in a brine, but is then covered in spices and smoked. They both come from the lower part of the brisket, which is also used in a lot of BBQ.
