Congratulations on starting on a healthier, kinder and more environmentally friendly path!!! (Amy seems cranky today)
The link listed below will give you *much* more information than any of us could ever hope to post here, please enjoy all the information and wonderful food and recipe ideas listed there!
Tofu gets a bad rap because most folks just don't treat it with the respect it deserves! Try the recipe in the second link for a wonderful hint of just how good tofu can be!
And please, when you (as a new veggie) start to get an urge to revert to your old eating habits don't feel guilty about eating the meat replacements or allow folks to harass you for using them! I've been veggie for years and not only use them but also enjoy making my own homemade ones!
Welcome home to you new extended family of veggies!

Orange Pineapple juice. I know it sounds little off the vegetarian diet but it is good and helps. I love it especially when you do not want to go for tofu or the vegetarian patties/ rimblets!! Or even try lemonade. Drinking these with any kind of vegetarian food - salad, pulses keeps up the energy level.

Oh, lighten up about Tofu. If you're going to stop eating dead animals, which to me is awfully gross, Tofu has good nutritive value.
You don't say why you want to go vegetarian, and are boasting about going a whole 24 hours without meat like that's a major accomplishment. I don't think you're ready to go veggie.

Well take a multivitamin and replace your protein with a lot of legumes, like beans, peas, and nuts. Also you can try seltan, tempeh, and veggie burgers. And give tofu a chance , you can fry it up or smother it in sauce or anything and the firm kind is better for doing so.

Cheese pizza is tremendous. Vegetarian chili (sans meat) is tremendous. Vegetarian lasagna is fantastic. Mashed potatoes with vegetable gravy...Tacos! Nachos. something i love is a meatball sub with out the meatballs- merely the marinara sauce, cheese, mayo and warm peppers. i'm no longer tremendous with the nutrition component of being vegetarian, yet i know what tastes sturdy. :)
