If your dad is a controlled diabetic, meaning he has had consistently good A1c's then there are no foods that are off limits.
Take the case of white foods i.e., potatoes, pastas, rice and breads, there are perfectly good alternatives to these, as red potatoes, whole grain pastas, brown rice and brown breads. If you noticed, these foods all have a higher fiber content, fiber slows down the absorption of glucose into the body's system and causes glucose values to rise and fall more gradually rather than spike and fall quickly.
It's mostly about portion size and time periods in between meals, he'll be better off eating 3-5 smaller meals per day.

There are many balanced meals that a diabetic could eat without causing any problems. Possibly cook up some buckwheat pancakes for breakfast with or without sugar free syrup or sugar free jams, for a snack some fresh fruit possibly a banana, for lunch fix up a sandwich with 100% whole wheat bread and make sure package says 100% fixed up with some deli meats such as lean cure turkey, or lean cured chicken, add a slice of cheese and maybe some lettuce, for a snack afterwards try some fresh veggies such as a salad with some cut up cucumbers, and tomatoes, then for dinner fix up some fish if he likes fish such as Tilopia, with maybe some whole grain rice, or even a spaghetti dish with whole wheat noodles topped with fit and active turkey meatballs and some hunts sugar free spaghetti sauce. Also if he likes sweets such as chocolates and ice cream, good deserts would be sugar free ice cream, sugar free chocolates, and sugar free fudge pops or even sugar free popsicles..these are just a few ideas. My father-in-law is a diabetic and these are things that we've found in different types of books found at wal-mart and local grocery stores for diabetic meals.

You can find general guidelines from the ADA, but, for your father's specifics, it would be best to talk to a dietician or nutritionist with expertise in the diabetic diet, who would work in conjunction with the treating physician. Although I'm type 1, teh principle of diet is still ths same, and the nutritionist or dietician can not only help formulate a balanced diet, but one based upon the patients caloric needs and lifestyle. After all, it's not only what you eat, but how much of it that affects control.

i have type 2, tell him to stay away from fruits in the morning. So here is my daily diet.

Breakfast - Pack of p.b crackers for breakfast
water or 4oz of milk
snack- yougart
Lunch- a loaded turkey sandwich (i piece of bread) with cheese and mayo, small salad (very little dressing) and a snack pack of potato chips - water
snack- apple
Dinner - salad with little dressing, steak or grilled chicken turnip greens and 1 roll - water
snack - pb crackers

Its a very hard diet to be on, I wish him lots of luck. I have attached a web site its really helpful
