Well, not Mexican but I do know some of these are wrong!

The first one, fried in lard traditionally. Not olive oil.
A tortilla is a flat round 'bread' in which you can stuff with whatever you like.
Avocado is ripe when it is slightly soft to the touch but not too soft
Tomatoes and avocados should actually be bought a bit under ripe and allowed to ripen on your kitchen counter unless you need them ripe to use right away.
The next one I don't know....I think they use pinto beans
Enchiladas a fruit dip? lol - never heard of makng them with canteloupe!

- no clue. It sounds right, but I'm not sure about the olive oil.

- A tortilla is a type of flat bread

- A ripe avocado is slightly soft to the touch. If it's really hard, it's not ripe yet.

- Tomatos will ripen somewhat at home. Especially if you store them with bananas or apples. Not sure about avocados.

- Don't know.

- Don't think so.

Okay, I'll chime in...

6) Enchiladas can be either made with corn or flour tortillas , and red or green suace depending on regional origination. Eg. My Mom's enchiladas are made with flour tortillas, red sauce, and are baked; she learned to make these from Grandmothers who hailed from Aguascalientes, and Zacatecas. My Mother-In-Law on the other hand uses corn tortillas, red sauce, and aren't generally baked; she hails from Jalisco. It just depends on where the recipes were handed down from.

Oh yeah, Tacos don't necessarily contain frijoles.

Great, now I'm hungry...
