*** Ok , I probably know someone who can make these things - (I'd be shocked if he didn't) but I just wanted to ask all of you this question!!!
(And can someone get foxie to stop e-mail stalking me - I'm married and it is undignified in a man of his age i.e. 56+ )

Cinder Toffee

INGREDIENTS
250 grams / 1/2 pounds sugar
1 tablespoon golden syrup
1/4 teaspoon cream of tartar
75 milliliters / 1/3 cup water
1/4 teaspoon baking soda
1 teaspoon warm water

METHOD
Put the sugar, syrup, cream of tartar into a heavy pan and heat gently until the sugar has dissolved. Boil without stirring until a little of the mixture forms hard, brittle threads when tested in cold water (154C/309F on a sugar thermometer). Dissolve bicarbonate of soda in the tin of warm water and pour into the toffee which will froth up. Stir well and pour into a shallow greased tin. Break into pieces when cold. Wrap in greaseproof paper and store in an airtight tin.



Pecan Molasses Toffee

INGREDIENTS
1 1/4 cups unsalted margarine
1 cup granulated sugar
1/4 cup firmly packed golden brown sugar
1/4 cup water
1 T dark molasses
1 cup very coarsley chopped pecans, plus 1/2 cup of medium-fine chopped pecans
1/2 t ground cinnamon
6 oz / 170 g bittersweet or semisweet chocolate, finely chopped

METHOD
Butter a small baking sheet. In a heavy 2.5 quart / 2.5 L saucepan over low heat, melt butter. Add the granulated sugar, brown sugar, water and molasses and stir until the sugar dissolves. Raise heat to medium and clip a candy thermometer onto the side of the pan. Cook, stirring slowly but constantly, until thermometer registers 290F/143C, about 15 minutes.
Remove from heat (not immediately after it reaches 290F/143C, or else the toffee will end up crumbly). Stir in the cup of coarsley chopped pecans and the cinnamon. Immediately pour the mixture all at once onto the prepared sheet; do not scrape the residue from the bottom of the pan. Let stand for 1 minute. Sprinkle the chocolate over the the toffee. Let stand for 1 minute to soften. Then, using the back of a metal spoon, spread the chocolate over the toffee until melted. Sprinkle with 1/2 cup fine chopped pecans. Refrigerate uncovered until the candy is firm, about 2 hours.

Break into 2 inch / 5 cm pieces. Store in an airtight container in the refriegator for up to 3 weeks.

Makes about 1 1/2 lb / 700 g.

Vegan Caramels

Melt:
1 c vegan margarine

Add:
2 ¼ c br sugar
dash salt
1 c corn syrup
24 oz vegan sw cond milk

heat til boils
reduce heat and cook /stir til 245 on candy thermometer
remove from heat

Add:
1 t vanilla

pour into greased 9x9
fridge overnight
stand at room temp 30 min
cut and wrap

TIPS: For Chocolate caramels add:
2 sq unsweetened choc w/ milk or 6 T cocoa and 2 T oil.


Vegan Fudge


INGREDIENTS
2 x Sweetened Condensed Soy Milk
3 cups semi-sweet chocolate chips
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
Optional: 1/2 - 1 1/2 cups chopped nuts

METHOD
Double the recipe for the Condensed milk. It should take about 2 hours of constant stirring to reduce down to 2 cups. For this recipe you only need 1 3/4 cups of the reduced milk, so you have to find something else fun to do with the 1/4 cup leftover. (try pouring "shots" of it and see how many you can do)
While the condensed milk is still hot, combine it with the chocolate chips over low heat. Stir until all of the chips are completely melted.

Take the mixture off of the heat and add the salt and vanilla extract. Mix in the nuts after that is all well stirred if you have them.

Pour into a wax paper lined pan that will allow the fudge to settle to 1/2 - 1 inch deep. Cool in the fridge for at least two hours before cutting it up.

you need the milk, but just substitute non- dairy products at equal amounts.
