cut into cubes and put in a lightly oiled pan on medium heat until the sides are a light brown.
If I am feeling saucy, I roll the cubes in cornstarch and fry them in a more heavily oiled pan until they become a light brown. Then I lay the cubes on paper towels to get some of the oil off.
I mix the cubes with my favorite Chinese sauce, some veggies and lay them on a bed of rice. OH YUM!
Sometimes I also make tofu-spinach spaghetti.
And sometimes I bake my tofu in an oven with buffalo sauce/seasoning and when I am done, I dip my buffalo tofu in veganaise.

However you decide to cook it , always cook with a lot of flavor. Tofu will take on whatever flavor you like. The easiest way is with stir fry. Add veggies and diced tofu. Use your favorite sauce or just use teriyaki. I also like it in soup. Use well flavored chic broth and veggies. Dice the tofu into bite size pieces. You can get fancier and make tofu Parmesan. Replace the chicken or eggplant with the tofu. Tofu burgers are good too. Mix with alot of spices(you can even use beef base)and green onion. Coat with bread crumbs and pan fry. Top with veggies.

Tofu is a cooked product. But you can use that cooked products in any way that you want. However, the amount of water in it will affect how you use it.
There are thousands upon thousand of recipes using tofu available just on the internet. Add a couple of other parameters for yourself, and be prepared to be reading for days at a time.

I'm not a huge tofu fan (I like tempeh better). However, when I do cook it, I usually get the super-firm, pre cubed tofu. Then, I crush up some corn flakes, italian seasoning, paprika, salt, pepper, and a dash of cayenne pepper in a ziploc. Then, drain the tofu cubes and put them in the bag and shake until it's coated. I will take this mixture and saute it in a fry-pan with a few teaspoons of lite olive oil. It's best when served with spaghetti and maranara sauce, but you can adjust the seasonings and make it asian style with brown rice and teriyaki, or make it with more mexican spices and make tacos with black beans, flour tortillas, lettuce, tomatos, and Tofutti non dairy sour cream. Yummy!

Spicy Vegetable Tofu Stir Fry
For best results, marinade the tofu overnight. If however you are rushing, 20 minutes will suffice. I also enjoy the full list of vegetables; yet, if you don't have all items on hand - don't despair, simply use what is in your refrigerator. Finally, you can feel confident substituting dry spices: for example, you may use 1 teaspoon dried ginger instead of the fresh and 1/4 teaspoon chili powder instead of the minced chile peppers.
1/2 cup stock
2 tablespoons soy sauce
4 cloves minced garlic
1 tablespoon peeled minced ginger root
1 tablespoon minced chile peppers
1 cup cubed tofu
1 tablespoon canola oil
1 diced onion
1 red bell pepper, cut into strips
1 cup sliced carrots
1/4 cup sliced mushrooms
1 cup broccoli florets
1/2 cup cauliflower florets
1/2 cup peas
2 cups cooked rice
Mix together the stock, soy sauce, garlic, ginger root, and chile peppers in a small bowl. Add the tofu cubes and marinate, preferabbly 3 to 24 hours. Heat a large wok or frying pan over medium heat. Add the oil, onion, bell pepper, and carrots. Saute for five minutes. Remove the tofu from the marinade with a slotted spoon and add the marinade to the pan and cook for 2 minutes. Add the mushrooms, broccoli, cauliflower, and peas and cook for 1 minute. Add the tofu, cover, and cook until the vegetables are crisp tender, about 2-3 minutes. Serve over hot rice.
My Favorite Tofu Salad
This salad has a lovely oriental taste and a crunchy texture that compliments the softness of the tofu. For the best flavor marinate the tofu overnight in the marinade. Rice wine vinegar is a very mild vinegar that allows you to cut the amount of oil in recipes. If you do not have rice wine vinegar, use your favorite vinegar and double the amount of oil used (or to taste).
Tofu Marinade:
1/4 cup soy sauce
1/3 cup rice wine vinegar
2 tablespoons water
1 tablespoon canola oil
1 clove minced garlic
2 teaspoons sugar
black pepper
pinch ground anise (if you have it)
1 pound cubed tofu
Vegetable Marinade:
juice from 1/2 lemon
2 teaspoons canola oil
2 teaspoons soy sauce
2 teaspoons sugar
black pepper
salt
2 julienned carrots
2 sliced celery stalks
1 cup shredded cabbage
1/4 cup sliced mushrooms
5 sliced scallions
Mix together all of the ingredients for the tofu marinade and refrigerate for at least three hours. Mix together the ingredients for the vegetable marinade and refrigerate for one hour. Gently toss the ingredients together and serve chilled.

I have two favorite ways. Both are imitations of egg.
F-Egg (fake egg) Salad
In a cast iron pan, warm a little olive oil. A low heat will do just fine. Add about a teaspoon of Turmeric. Toss in medium Fu and "scramble" it. Once it's good and yellow, add about 2 tablespoons of Nutritional Yeast. Mix well.
Take it off the burner and let it cool. When cool add capers and a little vegenaise. YUM!
The second is a Tofu Scramble.
Saute some onion til translucent. Add a teaspoon of Turmeric. Add what ever veggies you like in your scramble. Spinach and sundried tomato. Or Broccoli and mushroom. Then toss in your Fu and about 2 tablespoons of Nutritional Yeast.
Yum!

I mix up a batch of good seasons dressing with evoo & half balsamic vinegar half apple cider vinegar. I drain all of the liquid form the tofu then I marinate 2 blocks of extra firm tofu cut into slices for 45 min to an hour then I either fry it in frypan or bring it outside & cook it over a charcoal grill. It makes great sandwiches, or salad topping. I like to serve it on a bed of romaine lettuce with roma tomatoes, cucumber kalamata olives, feta cheese, greek dresing & a warmed pita ... or as a sandwich on whole grain bread with nayonaise (or miracle whip) with lettuce, tomato, and alfalfa sprouts.
Another way I like to cook it is to deep fry it plain and I mix up a spicy peanut sauce with 1 tbs peanut butter, a couple squirts of tabasco or redhot hot sauce and a 1/2 cup of water, bring to a simmer mixing well, serve warm...
Thai tofu satay.... mmmm yummy
For dessert, i like to take a block of silken tofu, drain the liquid, add it to the mixer with a 1/2 cup cocoa powder and 1c rice syrup or honey, to make a custard, then i pour it into a gramcracker crust and top with fresh berries, let chill in fridge for at least 2 hours...

1. I can fry it in slices in the pan for a sandwich.
2.I can fry it in small cubes to put in a vegetarian chop suey.
3.I can fry it in cubes (after sauteing onions in skillet) with some cut up mushrooms and add a big bunch of romaine lettuce (leaves separated) and some vinegar and water in the skillet and make wilted lettuce (cooking covered and stirring until wilted). (I had this yesterday)
4.I can start the same dish onions sauteed, mushrooms cut up, tofu cubed in a skillet and add a can of corn and a can of green beans with a little vinegar and some water and cook covered, stirring in skillet until cooked. (I had this today)

Tofu Parmesan:
35 min 5 min prep
4 servings
2 tablespoons olive oil
1 lb firm tofu, cut into 1/2 slices
1 small onion, chopped
2 cloves garlic, chopped
2 cups tomatoes, crushed or diced
1 teaspoon oregano
1 teaspoon rosemary
1/4 cup grated low-fat cheese or mozzarella cheese or cheddar cheese
1 tablespoon parmesan cheese
salt and pepper
1. In fry pan, add 1 tbls oil, fry tofu slices till golden brown, drain on paper towels.
2. Add the remaining oil and fry onion and garlic till tender.
3. Add tomatoes and spices, simmer for 15 mins.
4. Lay tofu in a baking dish, pour over tomatoe sauce, sprinkle with cheeses.
5. Bake at 350 for 20-25 mins, uncovered.
6. Enjoy!

I usually use a baked tofu (never had any luck with the silken varieties, no matter how firm). My favorite two ways are:
1. Cut into chunks, marinate & put on skewers with veggies, then grill! YUM
2. Cut into strips, dip in cornstarch, fry & add to a stirfry.
