Mushroom Risotto is a soft..has little to no crunch, creamy, thick and smooth...so you need something that counters that!
How about some crisp roasted vegetables, or fried sweet potatoes and leeks. Or ASPARAGUS or Crisy Green Bean Almandine...those two would offer a crisp fresh crunch with a bit of almonds and garlic or ginger. Hope this helps. Also I would not recommend mushroom risotto as a main dish.

How about some roasted asparagus? It's super simple and delicious! I think that they would go really well with the earthiness of the mushrooms. Just toss the asparagus in olive oil, salt and pepper then lay them out on a baking sheet. I like to scatter sliced onions or shallots over the top. Roast them in the 350-375 oven for 20 or so (you want the tips to get crunchy).

First of all, make sure they're not mushrooms from BJ's Club store, because today there is a recall on those. :) Aside from that, something like cheesy mashed potatoes or Ceasar salad sounds nice. Mushroom risotto sounds like it would go well with white wine. And tiramisu for dessert! What time is dinner?

Low Carb is so hard! I'm also watching my carbs so if I were to be making a Filet Mignon, I would side it with Vegetable Medley to include Broccoli, Carrots and Green Beans. ANother healthier Carb option is a baked Sweet Potato, when I split it open, I just put about a teaspoon of Light Brown Sugar to give it an extra yummy, sweet taste! :-) Enjoy!!

asparagus is apparently a popular choice! I agree- roast it in the oven with olive oil and coarse salt and pepper. It will be so good with the risotto.

In the superstore, fruits are usually selected much too soon. Some are rocks, many are wrong. Some of the fruit and vegetables are typical right (zucchini, onions, garlic, lettuce, greens, and a few others) so I'd have to go with vegetables.
