Rennet is obtained from a calf's stomach [in the slaughterhouse] but its essential constituent is rennin which is responsible for the clotting of milk.
Rennin is an enzyme of the gastric juice (along with pepsin) which acts as an acid medium and brings about the coagulation or clotting of milk.

YES BUT there are allot of Vegan Rennets in use. There are list of rennet less cheeses & vegan-rennet cheeses on the web.

Read the label, there are several companies and multiple varieties that use vegetable rennet.

I buy from Trader Joe's.... they state animal vs. vegetable rennet on the label.
