having people over for dinner tomorrow night - prefer the home food I ate when living in bombay (aunty was muslim, uncle was maharstrian brahman (odd mariage I know) the cook was hindu from karanataka) - all the recipes I learned were lost when a bag was lost with my notebook in it, any ideas as to what I should make - it has to be veg so I am thinking paneer palak, gobhi masala perhaps, want at least one other veg, plus the dal, rice and roti of course - thank you for the suggestions

I love bindi (okra) masala.
Bindi Masala
Ingredients: okra, cut in 1 1/2" - 2" pieces- 3 cups, Tomatoes, onions - 2 each, chopped, ginger paste, garlic paste- 1 tsp eeach, coriander powder, cumin powder- 1 1/2 tsp each, chilli powder- 1 tsp, turmeric, salt, garam masala, oil- as needed
Method: On a high heat, fry the onions in 3 tbsp of oil. Add ginger and garlic paste and fry for 30 secs. Add turmeric, coriander powder and cumin powder, followed by tomatoes, chilli powder and salt. After 1 min, add the okra and mix well. Do not stir too much. After 1 min, lower heat and let okra cook until soft. Add garam masala and fry until there is most of the liquid is gone.

I suggest baingan bhartha (or vangyachi bhareeth), or
any eggplant dish. The other option is a koshimbir/raita.
You could even do a mooli, or gajjar, or cabbage koshimbir.
Other ideas:
alu mattar, bhendi, phanas curry (jackfruit, use the cans!),
alu methi or malai methi mattar, koftas, paneer dishes,
veg korma...
I am sticking to the "punjabi" theme.

veggie/potato somosas, masala dosa or masala mysore dosa- the mysore is like a spicy tomato chutney; ur masala may taste best if u cook it in ghee )clarified butter(, and add sugar/honey and onions, and sambhar vada
