a several different japanese steakhouses i have noticed a bowl of something that resembles butter, but it is a light brown color and has a wonderful aroma when they put it on grill. what is it?

they use alot of butter & peanut oil

In the bowl, the big mound, is margarine. It doens't burn at high heat like real butter.

The stuff on the grill they pour into a smiley-face is probably sunflower (takes high heat) or safflower. I've never tasted peanut oil in use, and I can pick that out nearly anywhere it's used.
