Hash Brown Casserole Recipe
A hash brown casserole recipe from the forum, made with sour cream, cheese, and frozen hash brown potatoes.
INGREDIENTS:
·1 pkg. frozen hash browns (country style - 30oz)
·1 cup sour cream
·1 stick margarine (4 oz) or butter
·1 can cream of chicken soup
·1 T. instant minced onion (or freshly chopped onion to taste)
·2 cups shredded sharp cheddar or Colby cheese
PREPARATION:
Melt margarine. Place hash browns in 9 x 13 dish. Pour margarine over and mix well. Mix sour cream, soup, onion, and cheese in a large mixing bowl. Pour hash browns in the bowl and mix all together well. Then put all back in the 9 x 13 pan.
Bake uncovered at 350 degrees for one hour. Leave out or substitute any veggies you can or can't have.

Super Broccoli Casserole
2 boxes frozen, chopped broccoli, cooked and drained or 1 bag
2 eggs beaten
1 sml onion, minced or cut in very small pieces
1 can cream of mushroom soup
3/4 cup mayonnaise 1 cup grated cheddar cheese, mozzarella, or jack
Mix all together, put in buttered 9X11 casserole, sprinkle with cracker crumbs and dot with butter. Bake at 350F for 1 hour. Enjoy!

here is a super easy twice baked potato one-microwave a scrubbed idaho potato, When done, scoop out most of the flesh with a spoon, leaving a thick shell. Mash the potato with butter, olive oil, salt, pepper. herbs or whatever your favorite seasoning is. (I like smoky cumin) Mix in a little grated cheese-I use whatever is on hand. Put the mashed potato back into the shells, top with a little more cheese, and bake at 375 for about 20 minutes, or until lightly brown. These can be whipped up in just a few mins. I eat them all the time with all different seasoning, sour cream, etc. Also good with shredded zuchini, peas, spinach, etc.

I say you should consider adding rice and tortillas into your rotation. A small rice cooker doesn't cost much and you can make rice by just putting it in with water and turning it on, that's all.
Use beans to make burritos or other things with the tortillas. You can eat the rice with various bean and tofu dishes, etc... I like to stir fry tofu or potato slices (more work than tofu though) with salt/pepper, basil, olive oil, soy sauce or soy paste or vinegar. Then add vegetables to the stir fry (canned diced tomatoes or mixed vegetables are the easiest).

Here is a easy one for you
2 c. chopped broccoli, cooked
2 c. sliced carrots, cooked
1 can creamed corn
1 c. shredded cheddar cheese
1 sm. can fried onion rings
Layer the vegetables in a large casserole dish. Bake at 350 degrees for 30 minutes.

Sometimes I like to eat a can of black beans with some salsa and cheese mixed in. It is very flavorful, filling, and super easy and fast to make. Just open the can, dump in a bowl, and cheese and salsa and microwave.
