Ingredients :

450 g King prawns (you can use the same amount of fish)

8 tablespoons Vegetable oil

2 Spring onions (scallions)

2 cloves Garlic

2 Dried chilies

1 1/2 teaspoon Szechwan peppercorns

1 1/2 teaspoon Salt

Method :
Wash and shell the prawns.

Sprinkle on 1 1/2 teaspoon of the oil.

Cut the spring onions into 2.5 cm sections.

Thinly slice the garlic.

Shred the chilies.

Lightly pound the peppercorns and mix with the salt.

Heat the remaining oil in a wok or frying pan.

When hot, stir-fry the prawns over a high heat for 1 minute.

Remove the prawns and pour away the oil to use for other purposes, except for 1 tablespoon.

Reheat the oil in the wok or pan.

When hot, quickly stir-fry the chili, garlic and spring onion.

Spread out the spring onion and chili and return the prawns.

Sprinkle on the salt and pepper mixture and stir-fry for 45 seconds.

Serve hot.

If you're talking about dishes like Salt n Pepper shrimp or ribs, it's not too tough. Mix 1T Salt and 1 T white pepper with an egg white and 1tsp flour. Throw in your shrimp to coat it. Fry in a wok at really high temp til slightly golden (You can only fry 6-8 at a time) Serve immediately!!! I haven't tried the short ribs this way but the cooking time would be longer.

PF Chang's Salt & Pepper Calamari recipe

Ingredients:

500 g squid rings
1/2 cup flour
1 egg
1/4 cup milk
200 g fresh breadcrumbs or dry breadcrumbs
2 teaspoons sea salt
1 teaspoon szechwan pepper
1/2 teaspoon cracked black pepper
vegetable oil, for deep-frying

Method:

Lightly dust calamari with flour shaking off any excess. Then dip in to the combined egg and milk.
Combine breadcrumbs, sea salt and peppers in a shallow bowl, and coat calamari in this mixture.
Transfer to a plate and place in the fridge for 20 minutes.
Heat oil in saucepan and deep-fry calamari in batches until golden brown. Drain on paper towels.
Serve with some sweet chilli sauce.

You mean using this in cooking chinese dishes? You can usually use this in frying fishes, beef & vegetable dishes. Pepper will enhance the aroma & taste of the vegetables while salt will add flavor.

If you mean how can you cook like the Chinese takaway, you tell me! Indian I can do tolerably well, but whatever the recipe books say this defeats me. Even MSG doesn't work.

My wife loves this one: Make a pot of rice (your Choice) 1 can chestnuts 1 red bell pepper 1 red onion 2 tablespoons garlic 1/4 grated ginger bean sprouts 2 scrambled eggs snow peas Dark sesame oil fresh chicken breast strips First, fry your chicken breast strips in your sesame oil until golden brown, then add the rest of the ingredients except for the eggs and cook until tender. Add rice and eggs to the veggie mixture while skillet is still hot, simmer for just a few minutes, and mix until everything is well blended. Top with fresh cilantro, and sesame oil, and peanut oil. No Sodium, or MSG
