I'm just eating the foliage in my salads and it seems like allot of wasting if I throw out the stems.

Sure it is fine, as long as you don't mind the texture. Most people remove them because they don't like the texture of a mouth full of stems.

Stems are fine in the salad, just cut off the tip of the stem and use balance of stem attached to leaf in the salad, I agree it is a waste.

I made arugula pesto just now with my stems so they wouldn't go to waste. Delicious. Just follow one of the online recipes.

I always eat the stems, they don't bother me. Plus, I don't want to take the time to trim them all just for a salad.

I find it disgusting to leave stems on greens - I think it s quite lazy when a restaurant or "to go" meals include the stems - have your staff trim them off please!
