I mean besides apple sauce and sour cream... are there any veggies etc that go well or should they just be eaten on their own?

Well, since you are asking for SIDES, I would assume that you mean that the latkes are the main course, and therefore would not want any meats. I would recommend a type of non-starchy side, as the latkes themselves are (obviously) starchy. I would go for a side salad with a potent yet non-creamy type of dressing (because a creamy dressing would be redundant with the sour cream served with the latkes), such as a balsamic vinaigrette, with romaine hearts, baby spinach, arugula, and whatever other vegetables you like, and a type of cooked vegetable, such as sauteed green beans, (possibly with sliced almonds or garlic, if you like it like that). Avoid other tuber vegetables with a consistancy similar to the latkes, like carrots, as redundant textures have a negative impact on the quality of a meal, regardless of a flavor variation between the two items. Also, unless you are serving the latkes with apple sauce, you may want to think of a type of fruit to serve with this meal. If you like, you can always make (or just buy), your own cranberry sauce, (or lingonberry sauce for a Scandinavian flair).

I prefer them with just black pepper.

Some people like them sweet and some like them savoury, so just offer sour cream or yogurt, and apple sauce or some other fruit puree.

Now, if you keep Kosher, and you're serving them as part of a meat meal, the sour cream/yogurt option is out, of course.

How about some fried zucchini sticks, onion rings, fried mushrooms, and fried mozzarella cheese sticks. Really celebrate that oil lasting 8 days! Put horseradish sauce on the side.

I'm sorta confused by the?--- I consider latkes a side which i serve with many things .my family likes them with breakfast,sausage ,ham, eggs whatever.I also serve them as an accompanist with roast or any meat meal. but if you mean sides as in condiments or toppings ,then your choices are endless i,ve seen them with gravy,sauteed mushrooms and herbs,poached eggs and hollandaise sauce,creamed spinach ,stewed apples, fresh fruit,sourcream with fresh grated horseradish ,cheese sauce,sausage gravy,chipped beef gravy. your choices are limited only by your imagination and or food tastes.

They are excellent with gulash, Hungarian style It's like pork stew in tomato sauce and spiced with paprika and a salad on the side.
