There is meat substitute available at like Kroger's or basically anywhere that is flavored like taco meat would be. It's really good.
You could have tacos with meat and meat substitute. Or Quesidillas, One with chicken or any kind of meat and then Veggie ones. Or maybe just Bean and Cheese Enchiladas.
And of course Chips and salsa =]
and maybe have some conqeuso cheese sause too.
yeah I'm pretty hungry now that i listed all of this.

Why not make the whole meal vegetarian? If you have that many vegetarians there, it would sure be a lot easier for you. Meat eaters don't need to have meat all the time. Why not make it an Indian theme, lots of different kinds of curries etc. Or your Mexican theme would be easy as well, there are a million vegetarian Mexican dishes.
40 meat eaters - 40 vegetarians....the vegetarians can't eat meat, but the meat eaters can certainly go without meat for one meal.

I see others have already posted about Mexican food (which is easy to make vegetarian style also), but just about any "theme" will work! Chinese (sautee'd veggies w/ rice) Indian (curried rice and beans) Japanese (tofu is a great meat substitute)
On the Mexican theme: Southwest style egg rolls with corn, beans, rice and zesty dipping sauce are great buffet items. Also, mini-tacos can be made with tofu or just beans and cheese. Check your local Costco or Sam's bulk items in the freezer section and call the head cook at the school - they are your best reference for feeding lots of picky eaters at once! Good luck!

Good idea,do a Nacho bar.Then add a huge salad with a relish tray for the vegetarians.Some veg. eat cheese so you may have a really good idea going with the nacho,plus canned cheese is easy on the pocket.You could fry up some ground meat for the meat eaters, but variety at the salad bar should fill them up.Have a great party and don't work too hard, do a lot in advance.....

Well, Mexican is a good idea budget wise. You can serve them Vegetarian Chili with Mexican/Spanish rice. Some corn bread a a big salad with a Mexican inspired dressing. Have some nacho chips and salsa for appetizer. Guacamole is lovely but it would cost a lot to make it for 80 people.

Mexican themes may be a little easier than any other, because beans are a huge part of mexican diets. Refried beans are super easy to make (check beanbible.com), vegetarian fajitas, nachos.
If you are going with another theme, everyone loves Lasagne and its so easy to make veggie and meat! And serves lots of people because its so filling!

Pasta is a great inexpensive way to feed a large group. Make a couple of traditional sauces, both red and white, with and without meat . Everyone will be pleased. Go Italian!!

A Mexican theme is perfect! if all the food is served buffet style it will just take some simple steps to make it work for everyone.like tortillas made with veg shortening .then you have choices of beans and refried beans ,cooked and uncooked veg. your meats and sauces like salsa and guacamole.laid out in a buffett everyone can serve themselves according to taste with very little effort.

Then you should have several vegetarian dishes...
I know that there are many Mexican dishes that are delicious and vegetarian (with beans and all)...
And you can have something like to dishes for non-vegetarians, one with meat and the other with chicken.
Food must be served in a buffet in your case.
