First, you have freedom to eat anything. Should you eat anything from animal sources, then you are no longer a vegan.

Okay, gelatin is from boiled animal bones. Gluten is the protein in wheat. Gelatin, non-vegan. Gluten, vegan.

I think you can still have gluten. I have known vegans that were also gluten free, but that had to do with allergies. Gluten is extracted from wheat and other grains. I think the only way that a vegan would not be able to have gluten is that in some way that it crossed paths with an animal or animal byproduct in manufacturing.

If you had celiac disease or wheat allergy, you couldnt have gluten. Gluten is fine for vegan diets You cant have gelatin on vegan diet, because it is made from animal skins and bones, cartilage, etc.

Umm, that isn't true. If you are referring to gluten...the only reason you would avoid it is if you are allergic to it...but nothing about it is vegan unfriendly. As for gelatin...yeah...you want to stay away from that as it is made from the tissue and bones of cows and pigs...not very vegan. There is also fish gelatin..I stay away from that as well. There are plenty of alternatives...like agar agar and veg. gelatin.

You can have gluten. You cannot have "conventional" gelatin. You can have agar-agar, which is a substance nearly identical to gelatin, derived from some forms of seaweed.
