A great book with recipes is "Recipes for Diabetics" by Billie Little (published by Bantam Books). As well as giving you great recipes, it also gives the nutritional facts about each, and the exchanges in the Diabetic Exchange diet, for those who are following it. Check with Barnes and Noble; they have it available on their website. (I love the Banana Cream Pie recipe, with the Flaky Pie Crust)

my boyfriend really enjoys this pie i make using cherries, diced peaches, and diced apples. I just add a little bit of cinnamon, some splenda, and some flour. I buy the pre-made pie crust because they have few sugars in them plus it's easier to calculate how many sugars he's getting in each serving. I mix everything together and bake it for 350 degrees (wrap foil loosely around the edge of the pie to prevent it from getting too dark) for 35-45 mins. Viola! simple and it curves that craving for sweet.
