I have a rice cooker and I know how to make rice... Is sushi rice the same as regular rice?
I also have rice vinegar... I'm not too sure about how/when to add that.
Kombu... is it even necessary?
Wooden sushi barrel? What?

All these crazy sushi books I bought have their own variations on the topic. But I just want to know the easiest, simplest, quickest way to make sushi rice... and have it not be crappy.

I tried it once and it was too slippery and slimey and.. yea. It didn't work very well when I tried flipping the nori over (so that the rice would on the outside of the roll)... Maybe there's something wrong w/ the seaweed? It seemed to be really flimsy and tore easily..

Argh, i thought making sushi would be easy!

You'll get the best results by using short grain or calrose rice. Add the vinegar and stuff when it is done cooking. Err on the side of too dry.

"Sushi" as Americans know it is generally rolled. This is called Maki. Maki isn't very popular in Japan. In Nihon, "sushi" is usually nigiri ( a ball of sushi and a piece of fish on top). Sashimi (just fish) is also an option, but I don't think that is what you want here. The ladies here have supplied some very good recipes for the rice portion. They are right.. the rice is very very very important... so if you are going to make very good rice.. you need to have some delicious fish... go with the Torro.... everyone loves Fatty Tuna

Just make the rice as you would normally, when it is all done simply transfer it into a bowl and add a little bit of rice vinegar, and a little bit of sugar. Mix. Keep doing this until the rice becomes sticky. Walla! You want it sticky enough to stick to the seaweed, sweet enough to taste the sugar. Good luck!

Sushi rice uses sugar to make it stick
2 cups rice, soaked for 30 mins
5 tbsp vinegar
2 tbsp sugar
1 tsp salt

Add vinegar, sugar and salt into the soaked rice with the water and cook.

You can use regular rice. Just wash the rice 3 or 4 times and don't put the appropriate amount of water in.

i'm not sure but you may have better luck with sticky rice, i don't know exactly how to make it. It's a festival treat in china, very gooey and the sugar is added after so you can leave that out.
