Tofu is made from soy beans.
The beans are ground up with water to make a "milk"
The milk is heat treated
They add something to the milk to make it colagulate. It CAN be plaster but i think that is only in old style tradional methods
Its strained and set like cheese.
It can be firm or silken.
Silken is sort of the consistancy of yoghurt or sour cream. It can be used in mashed up in desserts, sort of like custard, or it can be used savoury. Japanese people eat a lot of silken tofu dishes.
Firm tofu is better for tofu burgers, curries and chinese stir fries.
You can also get deep fried tofu which is VERY tasty. Its is GREAT in Thai curries.

It is a compressed block of soybean curd (similar to milk curd). Its looks like a big white sponge. It doesn't have any flavor, so it just soaks up the flavor of whatever you cook it with.
