Italian pickled vegetables (a crunchy mixture of - usually - onions, carrots, cauliflower and sliced gherkins)
The most common liquid for acid pickling is vinegar. This is an impure, dilute solution of acetic acid, obtained by the fermentation beyond the alcohol stage of fruit (usually grapes, but also apples) or grain (usually barley, malt or rice).

• 1 medium Carrot, peeled and cut into 1/4-inch slices
• 1 rib Celery, cut into 1/4-inch slices
• 2 ounces Green beans, ends removed and cut into 1/2-inch pieces
• 1 small Red bell pepper, seeded and cut into 1/2-inch squares
• 2 ounce Pearl onions, peeled
• 1/2 cup Cauliflower, florets
• 2 cups Vinegar
• 1/4 teaspoon Sugar
•
• Seasoning:
• 1 Bay leaf
• 1 teaspoon Mustard seed
• 1 Clove, whole
• 1 Chile, dried
• 1 teaspoon Peppercorns
• 1 clove Garlic, whole and peeled
• 2 cups Olive oil
Method:
Place all of the vegetables in boiling water. Cook for one minute. Place in a colander in the sink and immediately rinse with cold water. In a separate pan, mix the vinegar and sugar and bring to a boil. Allow to cool. Place the vegetables in a non-reactive container. Add the vinegar mix and seasonings. Toss well. Marinate in the refrigerator for three days. Drain off the liquid and replace with olive oil. Store in the refrigerator for 2-3 weeks.

Pinguino wrote the right answer, it's SOTTACETI and it's made boiling vegetables in different ways (I have my own way, others do them in other ways, each family has its own I suppose). When you make different kind of vegetables, they call it GIARDINIERA. And when the vinegar is thrown away and dried vegetables are stored in jars under olive oil, they call them SOTTOLIO.
Anyway, I'm going to write my best family recipee of "Fagiolini sottolio" aka Sottolio French beans (sorry for my bad English, hope you understand).
1 liter of white vinegar, 1 liter of white wine, 1 kg of french beans, 1 table spoon salt, olive oil just to fill the jar, some garlic, some italian parsley.
In a large pan boil vinegar and wine and when boiling, put the cleaned french beans, salt and let them boil just 5 minutes not more (at least one minute more, but not more).Then dry the french beans in table clothes very well, you can wait all the night. Then after put the french beans close in the jar, add some garlic and parsley and finally add the oil so that the beans are under, you can put wood sticks to the top to avoid the beans come out the oil. Let the jars close at least 15 days before eating.

Italian vegetables stored in oil: Sott'olii.
"Giardiniera" is a type of "Sott'aceti", where a combination of vegetables is pickled in vinegar. Recipes vary greatly from region to region - and from one household to another.

All said above is correct, but I can give you the correct spelling:
Giardiniera (jar dee nee eh rah)
Sottaceto (sot ta cheh toh) (pl, sottaceti)
Sottolio (sot toh lee oh) (pl, sottolio, although somebody sayas sottoli or sottolii)
Sott'olio and sott'aceto are also correct, but less used.
There also "peperlizia", which although strongly related to one producer became popular during last twenty years.
