Three-b (buckwheat, Blueberry, and Butternut ) Muffins
These muffins are chucked full of things that are good for you. The recipes comes from Better Homes and Gardens.com.
12 muffins

nonstick cooking spray or 12 paper baking cups
1 1/3 cups flour
3/4 cup buckwheat flour
1/4-1/3 cup sugar or Splenda sugar substitute
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup mashed cooked butternut squash
1/2 cup milk
2 tablespoons cooking oil
1/2 teaspoon finely shredded orange rind
1/4 cup orange juice
3/4 cup fresh blueberries or frozen blueberries
1/4 cup rolled oats (Oatmeal)
1. Preheat oven to 400 degrees; Spray twelve 2-1/2-inch muffins cups with nonstick spray or line with paper muffins cups; set pan aside.
2. Combine, flour, buckwheat flour, sugar, baking powder,cinnamon,baking soda and salt in a medium mixing bowl;make a well in the center of flour mixture; set aside.
3. In a mixing bowl;Combine the eggs, squash, milk, oil, orange peel, and orange juice; Add the egg mixture all at once to flour mixture, stir until just moistened (Batter should be LUMPY), fold in Blueberries.
4. Spoon batter into the prepared muffin cups, filling each almost full; sprinkle with oats.
5. Bake for 15 to 20 minutes or until the muffins are light brown: cool in muffin cups oo wire rack for 5 minutes, Remove from muffins cups; serve warm, Enjoy.

Option-use honey instead of sugar, applesauce instead of eggs, soy milk, & 1/2 buckwheat flour, half rice flour. Worked out great.
To Die For Blueberry Muffins
"These muffins are extra large and yummy with the sugary-cinnamon crumb topping. I usually double the recipe and fill the muffin cups just to the top edge for a wonderful extra-generously-sized deli style muffin. Add extra blueberries too, if you want!"

INGREDIENTS
· 1 1/2 cups all-purpose flour
· 3/4 cup white sugar
· 1/2 teaspoon salt
· 2 teaspoons baking powder
· 1/3 cup vegetable oil
· 1 egg
· 1/3 cup milk
· 1 cup fresh blueberries
· 1/2 cup white sugar
· 1/3 cup all-purpose flour
· 1/4 cup butter, cubed
· 1 1/2 teaspoons ground cinnamon
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin cups or line with muffin liners.
2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
3. To Make Crumb Topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
4. Bake for 20 to 25 minutes in the preheated oven, or until done.

Three Cheese Muffins
Ingredients:
1/2 onion, chopped
3 tbsp of butter
1/4 cup of swiss cheese, grated
1/4 cup of cheddar cheese, grated
1/4 cup of Parmesan cheese, grated
1 tsp of dill
2 tsp of baking powder
1 egg
1 tsp of salt
1 tsp of baking soda
1 1/2 cups of milk
2 1/2 cups of whole wheat flour
Directions:
Preheat oven to 375 degrees F.
Beat together all the ingredients.
Pour the cheese muffin batter into greased muffin tins.
Bake muffins in a 375-degree oven for 12-15 minutes.

Blueberry muffins
A portion of the blueberries is mashed, to make these muffins very blue.
INGREDIENTS:
1/4 cup butter, softened
2/3 cup sugar
1 teaspoon finely grated lemon peel
1 egg
1/2 teaspoon vanilla
1 1/4 cups blueberries
1 cup plus 2 tbsp cake flour, sifted
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
1/4 cup chopped pecans, optional
Topping:
1 teaspoon sugar mixed with 1/8 teaspoon ground cinnamon or ground nutmeg
PREPARATION:
Preheat oven to 375°. In large bowl, cream butter, sugar, and lemon until light, about 4 to 5 minutes. Beat in egg and vanilla. Mash 1/4 cup of the blueberries and beat into batter. Whisk together flour, baking powder and salt.
Fold dry ingredients into batter, a little at a time, alternating with milk. Fold in remaining 1 cup blueberries and the pecans, if using. Spoon into 8 paper lined muffin cups.
Sprinkle each muffin with the sugar and spice mixture.
Bake until muffins spring back when lightly touched, about 20 to 25 minutes.

What country, What city and what tv or radio program? Too vague a question.. There are some good vegetarian places in Ca.. Look up vegetarian muffins on recipes.. some will show up and hopefully one will be the one your talking about or similar..
