Where do you live?
Try teaching yourself! Either get a vegetarian cook book and try some reciepes out, or go to goole and search for a recipe of your favourite dish and make that. Make a day of the week which is cooking day.
Cooking is a skill that takes time to develope. Its a bit like drawing, some people are just naturally good at it, others can learn it and there are some who are pretty much hopeless!
i think you would learn more if you made a deliberabte effort to teach yourself once a week than doing a cooking class for a few hour... though a cooking class if you can find one proberbly won't hurt.
I consider myself quite a good vegetarian cook, but it somethung that has slowly developed over the last 8 years. when i first moved out of home i was not such a great cook but through practice you learn about what flavours work and what spices and stuff you like best and how to balance flavours.
Balance is important. Thai food is a really good example of that. its a perfect balance of sweet, salty, spicy and sour in most thai dishes. It is a complex flavour but not hard to learn how to do it right. If you like thai food try some thai recipes.
Itallian is also good. Its quite simple food and its about bringing out the essence of the ingredients. If you can make a simple sauce of only 5 ingredients taste great you are doing well.

I learn cooking off the TV. I watch some cooking shows by Jamie Oliver, Floyd & Nigella. Its free (only pay for the cable) & you do learn right from the professionals themselves. Just replace the meat with vegetarian alternatives like tofu.
Alternatively, you could buy a simple cookbook off amazon.com.

I'm not a vegetarian but I like vegetable dishes from time to time. Vegetable kabobs with a bbq sauce. Mac and Cheese BBQ Chicken Pizza, Pineapple, and some other vegetable Seafood Stew Vegetable Stir Fry w/ rice or asian noodles Salad Sandwiches
