Steam them. It makes them softer and enriches their natural flavors. Try using some herbs on them as well such as garlic, which is strong in flavor. But then again, I love most vegetables.

Including veggies in such things as stirfrys are good for "concealing" the vegetable taste, if that's what you don't like much. BUT, don't cook the veggies IN the stirfry - it takes a lot of the nutritional value out of them - steam them first, then add them to the stirfry (or whatever meal) at the very last. This is what I've found works well, and the veggies still get some flavoring.

One way of steaming I've found that is SO easy...buy a Pampered Chef plastic microwavable "pan"...not sure what they're called though...but it steams vegetables very well.

You might try roasting some veggies. If you cut carrots into coins and lay them out flat on a broiler pan, douse them in olive oil and broil them until they are almost blackened (but not too much!) then they have a beautiful flavor. The same goes for red bell peppers. You might try eating them with a variety of dips to help you become desensitized to their strong flavors that you may not be accustomed to. I also used to hate many vegetables, but had to overcome that to help my family's health. I started using spinach for salads instead of iceberg lettuce and such. I didn't like it at first and thought it tasted entirely too "green" and weird, but I soon became "desensitized" to the strength of its flavor. I also used to hate bell peppers and jalapenos because of their very strong and distinctive flavors and now I have become accustomed to those over time and even enjoy them. It will take a lot of experimentation, but you can do it! I know I used to be super picky!

Several of my kids did not like veggies, other than potatoes..so I steamed them with salt and pepper, and the put them is a cake pan topped with shredded cheese and french fried onion rings..they loved em!
Two of those veggie haters are now vegan, and macrobiotic!
Another way I prepared veggies was in a veggie pot pie, cream of mushroom or celery soup, pie crust, veggies of any kind an onion, dab of milk and butter salt pepper..throw in oven until crust is done, and contents are steamy

that must be because you are over cooking them. steam them only slightly in the microwave or in a pot fitted with a steamer basket or insert. you are looking for "crisp-tender" not over done. season with a little olive oil, salt & pepper.

or, most veggies are just as good raw in salads or with dip as they are cooked.

starchy veggies have so little actual nutrition - you really must just keep trying other veggies until you find some that you like.

Use frozen or fresh vegetables instead of canned. Cook very quickly in a skillet with a very small amount of water. Use spices to flavor them and serve them while the texture is still crunchy and not soft.

Also, fresh asparagus and zucchini is great it rubbed with olive oil, salt, and garlic powder and cooked quickly on the grill.

try cooking them on the grill with some olive oil and garlic. very scrumptious! slice them long wise and lay on grill. you will be pleasantly surprised. i promise. squash and zucchini are the best.
