What are some good items to have on hand for stir frying? Such as spices and sauces, oils, etc. I plan to do a lot of oriental recipes, FYI.

1. A wok or non-stick frying pan
2. High temperature cooking surface for fast cooking
3. A sharp knife for cutting ingredients into bite-sized pieces to speed cooking process
4. One or two stirring implements (wok tools are best but wooden spoons or spurtles can do the job)
5. Basic ingredients for wide range of stir-fry:
a. Soy Sauce (Kikkoman is best if you don't want to have different types on hand. It is a balanced soy between light and dark
b. Sesame Oil as a flavoring agent, not a cooking oil
c. Peanut Oil as a cooking oil
d. Cornstarch or arrowroot or potato starch as a thickener for sauces
e. Garlic (fresh minced is best, garlic powder or granulated garlic next best...never use garlic salt, it is a waste of money
f. Imagination and persistence.....enjoy it and do it often, you will become an expert in no time.

I totally agree with the first poster. A wok, high heat and groundnut oil are all essential for stir frying as it needs to be done very quickly over a fierce flame. Wooden or silicon utensils are a good idea if you use a non-stick wok but personally I prefer a well seasoned steel wok. Seasoning a wok takes a long time and is an ongoing process but is well worth the effort. See this site for details

Chinese rice wine
Oyster sauce
Chilli oil
Ginger
Scallions.

"Essential"??
All you need is a container (wok, if you have one), oil (whatever you have or like), and any ingredients (perhaps excluding ice cream, hmmm.. although with a tempura batter!! ala baked Alaska).

Most of the other answers are way to specific. Stir frying is a simple technique, that's useful in most cuisines.
