...milk, in other words, how do you have to handle soy milk differently than regular milk? What else do I need to know about using soy milk instead of regular milk?

There is not problem at all with heating soy milk! It's actually made while the beans are scalding hot. The skin that forms on top of soy milk is called Yuba. I don't stir it in but instead use it as a veggie replacement for crepes! You can also form a Yuba skin on the surface of the pot and it's good also but has a chewier texture. You can marinate this Yuba with a dash of liquid smoke and if you have it some Marmite to make a veggie bacon!

The only time soy milk ever reacts differently is when you add cold soymilk to hot tea or coffee it can turn into tofu as soon as it hits the hot liquid! Heating the soy milk prevents this from happening.

i used to be a barista, so i'd make coffees for people. there's no problem with heating up soy milk at all. but we steam up milk to make the foam that people love so much. and the difference is that soy milk doesn't make that foam.

I made Potato Soup with Soy Milk and it tasted fine so I know you can get it hot and it will be fine.

Nothing bad happens to it. It just foams over a lot more than regular milk, so heat it very slowly.

Yes, nothing happens, except a skin might form on top. Just stir it before it cools down too much, and it'll go away. I like it with cocoa, sugar, and vanilla stirred in (no vanilla if it's already vanilla-flavored).

You can use exactly the same as dairy milk in any food recipe or drink. Hot drinks, sauces, custards,etc. same application.
