The mexican food available in most corner of the USA isn't really mexican food. The restaurants even claim to have "authentic mexican cuisine", but end up morphing it back into American food.

True mexican food is hard to find, but it is very very healthy and delicious. (Other than the fact that they use lard in many recipes).

It contains combinations tha usually involve: Corn, Chiles (fresh or dried or canned), pinto beans, cheese, and or meat (usually pork).

Their home cooking involves much more soups and broths than you would imagine from what you see in restaurants.

From my vast experience cooking mexican food from scratch, REAL mexican food revolves around chile peppers. A meal made without them in at least one dish isn't a mexican meal. They aren't always hot either.

If you can get a home cooked really REAL mexican dinner, you will understand what I am saying. It is a real treat, especially if the CORN tortillas have been made from scratch. Delicious.

Mexican food when prepared well is great. Unfortunately, it's been spoiled by chain restaurants and fast food slop like most great ethnic cuisines in the U.S.

The best mexican food I've had didn't involve beans, tortillas, tacos or burritos.

Its fantastic! I love the use of cheese and spicy tang. Smoother salsas are best if you ask me, though pico de gallo is great. Hmm, I prefer some of the more common foods, but I really only like eating at an actual Mexican Restaurant, not an American restaurant that claims to sell Mexican food.

Soft tacos are great, as are tostadas, and chimichangas. Those are my top picks. But also, real nachos (beef is best), burritos, flautas, spicy rice, charro beans, man... I could so go on. I love Mexican food!

I am just learning more about it and am enjoying it. I never cared for it before. I have recently made tuna tacos, with homemade taco sauce-they were wonderful. I bought a tortilla press a couple of weeks ago at a mexican grocery store, and a bag of mesa. I have been making homemade corn tortillas-delish! After going pescatarian, I started looking for more choices in foods, and found that the ethnic foods are by far more interesting than the foods I used to eat.

I became a vegetarian in August, and the thing I miss the most is sushi and Mexican food!!!!

I make dishes with substitutes, but it is not the same. It sucks too because I live in Tucson where the taco stands are the best!

Being raised in So Cal, I love Mexican food. I love fresh fried tortilla chips and smashed (not refried with lard or oil) pinto beans. I love home made tamales and chiliqueles, rellanos, tacos...all of it! There are so many different flavors from the different reigons of Mexico.

Its so much more than chips and salsa, refried beans and tequilla shots.

It's great! I happen to live in a place where there are tons of authentic Mexican restaurants. It's totally spoiled me off American-Mexican food.

It is very profitable for the restaurant owner. Every dish has the same basic ingredients - and how can you not get rich serving alot of beans and rice and a little bit of meat at $7 to $10 a pop?

Yes this is real comfort food! Traditional dishes with deep fried corn chips topped with sour cream are too many points for eating styles today but with out those sweet / hot / mild / pungent spices you might as well eat gruel!
