I hate to waste it. I used it for the first time today to make a sorbet. I was disappointed that it didnt taste like coconut. Anyway, I would like to make something else quick and easy with it but I havent a clue! HELP!

CURRIES or even some stir frys! Lots of Indian & Thai recipes
require coco milk.

I have also frozen it for later use (in airtight tupperware).

Although you don't have enough to make a full recipe, your request made me think of this recipe my sister gave me. I've tried it and it is very sticky but good tasting. Funny, the friend is a medical doctor -- note the high carbohydrate & cholesterol forming content.

Filipino Rice Confection
from Beryl's friend

2 cups sweet rice
14 oz. Coconut milk
¾ cups brown sugar

Mix above ingredients. Bake 350° or Stir in pot 45 minutes at low heat. (Mixture is very sticky.) Cut into squares.

Roll squares in shredded coconut

If you only have 1/2 cup left. You can use it instead of milk in a dessert pudding. You can make rice or tapioca pudding with it or you can make a quick curry by sauteing your spices, garlic & ginger as a base, add your meat, shrimp or tofu and pour in your coconut milk.

Try this simple dish:

Slice one or two bananas thickly. Bring the coconut milk to boil and add 2 tbsp brown sugar (it would take even better when you have palm sugar) and the sliced bananas. To thicken the sauce, just add 2 tbsp of sago.

Add it to a can of cream of chicken and mushroom soup with a little curry pour over skinless chicken breast and bake. So much better than your ice cream that I would of made with cream de caco as it is thicker,sweeter than coconut milk.

Pour it into an airtight container and freeze until you get an idea about how to use it. Mix with a little pwd sugar and pour over chocolate cake.

You can make some lovely cocktails by mixing it with fruit juices and spirits like vodka or tequila. And it goes well in fruit punch, either alcoholic or non-alcoholic. And it freezes well, so you can save it until next time you need it.

ad it to a white or yellow cake mix before baking,substitute pineapple juice for the water in the cake mix and ad some crushed pineapple
