Recipe Chicken 65
Chicken 65 has become one of the popular offerings in the full service restaurant industry. No one really knows the origin of the name. It is believed that some one tried to cook a whole chicken in a pot with 65 dried red chili peppers to make it hot, and then adjusted the spices by adding lime juice to make it more palatable. The dish has been modified to compete against American "Buffalo wings". The basic pungency in the dish is derived from ginger, cayenne pepper, mustard powder and the vinegar. The dish can be served as a main entree and made from chicken breast, or as an appetizer. The recipe varies with every restaurant to restaurant.
The cooking technique involves three major step; marinate the chicken, make the batter out of the marinate and deep frying, baking the deep-fried chicken.
Marinate
1. Skinless Drumsticks: 8 - 12
2. Minced Garlic: 2 Tablespoon
3. Ginger finely chopped almost pureed: 2 Inch
4. Cayenne powder: 1 Tablespoon
5. Salt: 1/2 Tablespoon
6. Degi Mirch or Paprika: 1 teaspoon
7. Whole-milk Dahi (Yogurt): 1/2 Cup
8. Hot Mustard powder: 1/2 Tablespoon
9. Lime Juice: 2 Tablespoon
10. White vinegar: 1/4 Cup
Deep frying
1. Egg slightly beaten: 1
2. All purpose flour: 2 Tablespoon
Method
Step 1: Marinate: Mix all ingredients except chicken drumsticks well. Add drumsticks and put it in a refrigerator for about 4 hours or overnight.
Step 2: Deep frying: Cook the drumsticks and marinate on stove top at medium heat till they are tender. Remove the drumsticks from the marinate. Add flour and egg to the marinate making it in to a batter. Coat the drumsticks in the batter and deep fry at 350º F for three minutes.
Step 3: Baking : Preheat oven to 400º F. Place the fried chicken drumsticks in the pan. Arrange so they don't touch each other. Bake 25 minutes or till done. If you wish to make them crispier, deep fry them without adding batter for three minutes at 350º F

If you want alternative explanations:
1. It was 65th Item on the menu at a Restaurant
2. Originates in the chettinad region which is a large Chilli producer. 100 grams of dried red chillies produce 65 Grams of powder. And since it uses chilli powder .. Chicken 65.
3. Chicken was cut into 65 pieces
4. Took 64 tries before they got the recipe right
5. 65 Chillies used by the Chef (capitalizing on a test of Macho-ism involving Chilli eating contests).

It is an Eastern Indian recipe for chicken
Chicken-65
Ingredients
1/2 kg Boneless Chicken
3-4 drops Red-Orange Colour
1 tbsp Ginger-Garlic Paste
1 tsp Fresh Garam Masala
1 1/2 tsp Red Chilli Powder
1 tsp Turmeric Powder
1 tbsp Corn Flour
Hand full of Curry Patha
5-6 Green Chillies
1/4 cup Corriender
Salt to taste
Oil for frying
Method:
1. Cut chicken into small pieces and wash them.
2. To the chicken add ginger-garlic paste, garam-masala pwd, colour, corn flour, chillie pwd, salt turmeric pwd. Mix them well.
3. Let it marinate for about 1/2 an hour.
4. After that heat oil in a kadai and deep fry the marinated chicken taking 8-9 pieces at a time.After the chicken becomes crispy but not dark colour take them off.
5. Now in the same oil deep fry the curry patha, slited (length wise) green chillies till crispy.
6. At last decorate the fried chicken with fried curry patha, green chillies and corriender.
Serve with Mutton Biryani or as a snack.
