CAN

Fruits, Veggies, Grains, Pasta, Rice, Cane sugar, Brown sugar, Beans, Soy, Nuts, Maple Syrup, Yeast, some butters, oil, seeds...
Here is a list of Accidentally Vegan food - Food that wasn't intended for vegans but can be eaten by them,
http://www.peta.org/accidentallyVegan/
Some companies work on making foods that aren't usually vegan, edible for vegans. You can find these foods on http://veganstore.com or http://veganessentials.com
There are many fake meats, cheeses, cream cheese, milk, yogurt etc. that are made for vegans.

There are tons of things you can make that you wouldn't think are vegan.
Start out by making what you normally do and taking out/replacing the animal ingredients.

CANNOT
~~~~~~~
Animal flesh (fish is an animal),
Milk and milk products and derivatives such as Casein and Whey,
Eggs and Egg Beaters,
many do not eat bleached foods such as White Sugar because bones are used to bleach,
Honey, Beeswax, Gelatin, some Glycerin, some Mono&Diglicerides etc.
More and more companies are using vegetable-based mono&di's because they are finding it to be cheaper. You can write to companies and they will tell you if it is animal or vegetable.
P.S. Veganism is a lifestyle, not just a diet. That being said, vegans do not wear or use products made from animals. They also try to purchase products that were not tested on animals.
EDIT-
Can
~~~ Mustard, catsup, barbeque sauce, veganaise, Itialian Dressing (w/o cheese) many vinegarettes

Cannot
~~~Mayonaise, ranch... anything creamy,1,000 Island dressing, perhaps even French dressing.
First of all, since being vegan is a choice, I prefer to say that vegans will or won't eat, rather than can or can not. I correct my friends all the time. Basically, vegans eat anything that does not come from an animal either directly or as a byproduct. So vegans WILL NOT eat meat (cow, chicken, pig, fish, seafood, eggs, dairy, honey, etc.) or wear leather, suede or fur, etc. Also, vegans WILL NOT use household or personal care products that have animal ingredients or have been tested on animals. So going back to the food that vegans WILL eat: all vegetables, fruits, grains, legumes, nuts, etc. As far as processed vegan products, there is tofu, soy milk, hemp seed milk, rice milk, veggie burgers (but some have dairy or eggs), soy cheese, rice cheese, almond cheese (some have casein, a milk derivative). All one has to do is shop in a health food store to see an incredible world of vegan foods. The vegan diet is much healthier for you as well as the planet. Here are some links that you can check out if you want to become more knowledgeable.
Vegans do not eat:
products made from animals
so avoid anything with meat (fish, "red", bird, or broth from these), dairy, eggs, gelatin, etc.
Vegans can eat:
Products not made from animals
fruits, vegetables, grains, nuts, minerals
If you have a favorite food that isn't vegan, you can probably find a vegan version of it (except for things which require lots of eggs like Angel Food Cake, you're out of luck there.)
You can find lots of these things at your local grocery or at
foodfightgrocery.com or veganessentials.com or pangea.com
If you want recipes, do a search for the Taste of Vitality cookbook.
In response to your edit:
Pasta- most is fine except for egg noodles, pasta stuffed with cheese or meat, and some dyed pasta made with squid ink.
Bread in it's simplest form is vegan (flour, water, yeast) but many times the additives are not. (Such as whey, which is made from milk)
Vegans dont eat any animal products at all. This includes alot of things found in prepared processed foods. Your best bet is just to eat whole foods for the most part.
You can eat anything--as long as it didnt come from an animal or has a product that comes from an animal in it.
So, meat, dairy, etc. is off limits.
There is vegan chocolate, milk, and stuff at most health food stores, though.
The way I understand it a Vegan can only eat foods that do not require cooking. In short, if you have to cook it in order to eat it then it is off your menu!
