Morning Star Farms has great vegan chicken and beef substitutes, and Ives has great vegan ground beef and lunchmeat substitutes. I personally love tofu. It is great for making Chinese food. Know which restaurants have good vegetarian substitutes for when you want to go out to eat.
You CANNOT sill be hungry after eating sezhwan-tofu stirfry on a bed of noodles!
Also, when we crave meat, we often crave the fat and grease. Fat is a highly addictive substance found in meat. You might *not feel satisfied* because yor body is wondering where the heck the fat is. A great fix is to cook a dish heavy in olive oil; you will get the fat you crave (but please don’t make a habit of it.)
Also, read some great literature and get a support system.
Join the vegetarian society or vegetarian web-blogs. These will help keep you connected to other vegetarians; they also keep you close to great recipes. Sometimes, knowing others like you are out there is a great help, especially if they have a lot of experience and tips to help you.

I personally spent a few years feeling guilty about how animals were killed. One night I went to sleep and decided to stop, I woke up a vegetarian. The first few months were very difficult, passing up mom's bacon when i visited and passing up spicy chicken sandwiches. But I got past it. The best thing I ever did was learning how to cook. Fake meats were good for me too because I was actually quite fond of the taste of meat, I just couldn't face myself for eating it.

It sounds like you just haven't learned enough about what to eat to keep from being hungry. I'd advise going to a bookstore and buying a book or so on vegetarianism, and reading up on what a healthy diet would sound like.
A crash course on how to stay full: If you can, eat something healthy whenever you're hungry. Nuts work, or fruit, whatever, just don't take chips or whatever. Try a health food store for healthy snacks!
If you need a healthy but quick meal, try a stir fry or veg microwave dinner. Always keep lots of breads, peanut butter, fruits, and veggies in the house. I think you can do a yahoo search on posts about a basic vegetarian grocery list.
To saty full, eat avocados with your meals. They have somehting in them that makes them digest slower or something, so your quickly digested foods stop making you full just as the avocado kicks in. You can also eat a handful of nuts before your meals (about 15 minutes) which releases some hormone that makes you feel full longer. I've also heard that cinnamon and vinegar also help you stay full.
Really though, check out a book or three. They're great help on how to get nutrients and all. You can also check out www.veggieboards.com for advice on whatever you need to know. Vegetarianism can be amazingly healthy, and though many people have your complaint it is always solveable. You've made a great choice- stick with it! ANd if all else fails, just give up meat a bit at a time, remembering to replace it and keep full.

It is difficult for people who are in the habit of eating "meat and potatoes" every day to suddenly change their lifestyle but there is lots of help out there from your book store, local health food store and tons of websites.

You have reduced you FAT intake so yes you'll be hungry. The baked potatoes are a great start. Try baked, mashed oven fried(olive oil) Potatoes, Sweet Potato or Winter Squashes(Acorn, Butternut etc.) too. They are feeling & low fat, high in fiber & vitamins. Nuts will also help, stick will unsalted or raw if possible. Avacadoes have some good fat too. Remember you body is adjusting to not spending hours(or days) digesting animal.
I do a Ounioa, Brown Rice mix with Dreid Fruit & Walnuts as the start of my day. Oatmeal works too.

I stuggled with it until I reframed the way I think about it. I also have multiple food allergies, and cannot have wheat, eggs, soy, peanuts, and quite a few other things, which left me with a very limited diet. Instead of thinking about what you CANT eat, focus on what you CAN.eat. Check the ethnic section for new ideas. I have been eating foods I never heard of before and LOVE IT! You might also consider being pescatarian, like me. I enjoy fish and seafood, so I make them a couple of times a month as a treat. It has been so much easier since I just changed my way of thinking..I no longer feel I am missing out on anything. I hope this helps.

You shouldn't be hungry. You must not be doing something right. Eat beans, rice, grains, fresh and cooked veggies, fruits, breads, pasta, nuts, tofu. Make sandwiches, casseroles, wraps, stir-fries, bean burgers, soups, fruit salsas, smoothies... are you still hungry? Cause I'm stuffed!
