A century ago stuffed pasta with vegetable-based fillings were eaten on Fridays and in Lent by the well off, and eaten year round by those too poor to buy meat. The meat-stuffed varieties, on the other hand, were a day-after treat made with the left over meats from Sunday dinners or festive meals. Times have changed, and now most people buy stuffed pasta ready made.
Stuffings can be either meat, vegetable, or fish-based, and can include a creamy cheese such as ricotta.
Ravioli should be filled with greens or greens and cheese -- this is because they are Ligurian, and the Ligurian diet was almost exclusively vegetarian, especially inland. However, the word ravioli denotes a shape, and there are a number of meat-based recipes for them.

Hi,
Ravioli is made, as you know, from 'patches' of pasta folded to enclose their fillings.
The fillings are normally of two types, one is cheese. This type usually is served with a 'creamy' based sauce (like carbonara) the other type is a meat filling, this can be pork, which possibly could look pink, but is more commonly beef, this type is normally served with a tomato-based sauce (sometimes even bolognese)
I have never heard of pate being used as a filling for ravioli, but there is no reason why this could not be an option. I have had ravioli served with fillings of items as varied as corned beef (in Milan) and fish (in an Italian restaurant in Malaga) choice of fillings is entirely up to the chef...so beware!

ravioli doens't have a set standard that it is produced by. you can have several variations of it. so the fillign is ususally different. pate when heated i think isn't sticky. i have a feeling the pink u are alluding to may be some bacon, or panchetta or pruscutto, or some kind of meat, but pate, i doubt it. pate's pretty expensive so if u ate some expensive ravioli then maybe, but i highly doubt it. i mean, who puts pate in their ravioli, i never had that with ravioli befoer and i luv food, esp italian

usually beef is used in the ravioli pasta but in many cases minced mutton or chicken can also be used.

vegetarian fillings would be cheese,spinach,tofu.Non vegetarian would be ground or finely minced beef,pork or chicken..i couldn't tell you what makes it sticky,but i don't think pate would fit the bill.
