you are all wrong...........

when you make the syrup which consists of water, sugar and cinnamon sticks lemon or orange peel (pieces not grated)is boiled with the other ingredients to enhance the flavour of the syrup. Thats how the greeks make it. Ive never heard of grated peel or even adding it to the nut mixture.

No, it's the whole peel. That's why Baklava is so difficult. The peel must be in one piece with no cuts. You have to stick a pin in each end of the lemon and suck the insides out. Only when empty is it ready.

Oh, and be sure to film and upload to YouTube.

in baklava you use only lemon juice for syrup
but if you like lemon, you can use some zest ( only yellow part, white is bitter)mixed with nuts. it is tooooo much 1lemon zest for baklava. you will not enjoy that strong flavor

It depends. If it is in the syrup, it doesn't need to be grated fine, because the big stuff all gets fished out of the liquid before you pour it over the pastry.

If it is in the nut filling, YES, it should be grated fine.
