The world is your oyster here! For non-zuchinni lovers, the alternatives are endless: you have yellow squash, pattypan squash, summer squash, cauliflower, carrots, spinach, green beans, chard, brussel sprouts, Napa Cabbage, leeks, and so on. You might consider artichoke hearts mixed with green chili's and cheese in a casserole. Or fresh sweet corn spoonbread.

Zucchini.
Pretty much any recipie can be made without zucchini (except for maybe stuffed zucchini ) just as most recipies can be made with meat, you just ommit the ingredient (easy if there are lots of other vegetables in it) or replace it (with another type of squash or any other veggie really, you have to judge on the recipie.)
But I wouldn't brush off zucchini, when I became a vegetarian I learned to enjoy a lot of foods that I didn't like before, and studies find constant exposure in differnet forms to particular foods make a large difference in whether someone likes a specific food or not.
Perhaps you shouldn't give it up totally but try cutting back the amount of zucchini in a given recipie at first.
Nutritionally, zucchinis are rich in valuable antioxidants that help fight off cancer and free-radicals. Plus contain beta-carotene, vitamin C, folic acid, and calcium.
Zucchini is also a good source of fiber (4 grams per cup). An adult should get about 30 grams of fiber per day in their diet. One cup of zucchini has nearly as much potassium as a banana. Plus it contains the valuable mineral nutrient phosphorus. (Basically it provides you with a lot of what meat would, without the fat, and more.

Omg, i am a vegitarian, so mabey i can help. How bout a nice orange smothered salmon sitting on a bed of asian veggies (not zuchini). Or, a good protien shake is always at hand. My two pesonal fav. foods, that i want u to try, cuz i know you'll love em, tofu, and sushi (not together).

My favorite meal to have when it is just me to cook for is rice (add frozen peas) and fried onions with kidney beans. I add lots of hot spices to it too. You can add any kind of additional veggies that you like.

My favorite is Mushroom Stroganoff. There is also Eggplant Parmesean.
