I need them to be wheat, soy, egg, free and also no meat or poultry-seafood is ok. Thanks in advance-I always find the recipes I get on here to be the most useful.

Potato Latkes

(Serves 4)
1-1/2 pounds potatoes, peeled and grated
1 medium onion
3 tablespoons cornstarch
1 tablespoon fresh parsley, finely chopped
dash of pepper
Salt to taste

Mix all ingredients together in a large bowl. Form 3- inch patties and fry in lightly oiled pan over medium heat for 10 minutes. Flip latkes and fry another 10 minutes until crisp on both sides. Serve warm with sour cream.

Check this site for the mashed potato recipe of a few days ago. I starred the one that used Yukon Gold potatoes.

Cheesy Potato Scallop:

Slice potatoes and boil for 5 minutes
Meanwhile, fry onions in butter, add 2 Tablespoons of flour. Add milk and grated cheese.....a little at a time to get the right consistency. (you can add cooked meat or kidney beans or tofu if you like). Add some seasonings such as salt, pepper, cayenne, paprika, and hot sauce and garlic if you really like it)

Drain potatoes. Mix potatoes with cheese mixture. Put in pan that has been sprayed with cooking spray. Cook at 350 for about 30 minutes.

The Irish and the Germans have the most potato recipes, so ask your friends and comrades of Irish or German decent.

In Ireland, I was served a stew with mashed potatoes and mashed parsnips side by side. I took my fork and swirled them together. Beautiful and delicious!
