Stuffed Mushrooms
Scallops wrapped in Bacon
Large Sea Scallops Washed, and take the mussel out. Patted COMPLETELY DRY.
Bacon Slightly pan cooked
Once scallops are dried pan Fry them until golden on each side.
Cook bacon until slightly cooked 3-4 minuets per side.
Drain Bacon on paper toweling.
Take a scallop and wrap some bacon around it.
Stick a toothpick in the middle attaching the bacon to the scallops.
Place on a baking sheet, and bake for about 10 minuets in the oven.
Take out of oven and put on a serving platter. SERVE IMMEDIATELY
Stuffed Mushrooms
Large Mushrooms Washed and Stems removed Leaving the caps
Cream Cheese
Ricotta
Spinach
In a medium mixing bowl Beat Cream Cheese and Ricotta on medium to make it smooth.
Blanch the spinach.
Mix the spinach in with the cheese mixture.
Spoon into mushroom caps
Bake 15 minuets in the oven
Remove and Put onto a serving platter Serve IMMEDIATELY!

I love deviled crab stuffed mushrooms, great but also not the simplest thing to make. Alternately, I have a great, easy appetizer.
Crab-stuffed Mushrooms:
Large, fresh mushrooms, as many as you need.
Wash & stem the mushrooms. If you like, you can chop the stems and add them to the stuffing mix or discard them.
Stuffing:
6 tbs. butter
1 med. onion, finely chopped
2 stalks celery, finely chopped
1 med. red or green bell pepper,
finely chopped
1 clove garlic, crushed
1/2 cup white wine or water
3 tbs. fresh lemon juice
12 oz. crabmeat
1/2 cup seasoned bread crumbs
2 tbs. fresh parsley, chopped
1 egg (slightly beaten)
Saute onion,celery, pepper, garlic and mushroom stems if using them, in melted butter until tender. Add wine and lemon juice & heat. Remove from heat.
Add remaining ingredients and mix well. Stuff mushroom caps generously and firmly with stuffing. Place in a shallow buttered buttered baking dish & bake at 375 for 8-10 mins--broil an additional 3 mins, if you like. Serve with fresh lemon wedges.
My sister-in-law makes these really pretty, delightful, bite sized morsels:
1 8 oz cream cheese
1 pkg ranch dressing mix
white, wheat, or rye sandwich bread
Fresh dill sprigs
Use a tall, thin shot glass, like a hard rock cafe type shot glass or something of similar size, like a 1 inch cookie cutter. Cut out rings of white, wheat, or rye bread, or a combination.
Put them on a cookie sheet and bake at 350 for 5-10 mins. Just want to get the bread dry and kind of crispy.
Mix softened cream cheese and the ranch mix.
Using a decorator bag with a star tip, or just a ziploc bag with a corner cut off, pipe the filling onto the cooled bread rounds.
Top with little fresh dill sprigs.
These are SO good, so easy, and people gobble them up. They are also impressive looking.

Stuffed Cherry Tomatoes
24 to 26 Chery Tomatoes
1 8-ounce package cream cheese, softened
1 Tablespoon snipped fresh or frozen chives, or one teaspoon
dried chives
1 Tablespoon milk
1/4 teaspoon dried basil, crushed
1/4 teaspoon black pepper
1/8 teaspoon garlic powder
Slice a thin layer off top of each tomato. UBetter sing a small spoon, carefully scoop out and discard pulp. Invert tomatoes, drain on paper towels.
For filling: In a small bowl combine cream cheese, chives, milk, basil, pepper, and garlic powder. Beat till smooth. Spoon or pipe the filling into tomatoes. Serve immdedately or chill up to 8 hours. Makes 24-26 servings.

Crescent Roll in a tube
Cream Cheese
Rosemary
Parmasean Cheese
Mix cream cheese, rosemary and parm to gether. Roll out the rectangles of crescent roll, pinch the perferations together. Spread misture on dough, roll, starting with a short end. Cut into slices and place on cookie sheet. Bake according to roll directions. They are yummy!

I'm for somewhat simple these days myself, but here are a few of my favorite appetizers:
Hot Artichoke Crab Dip
2 cans artichoke hearts, drained and chopped
1 can diced green chilis
1 can lump crab meat, rinsed and drained
1 cup mayonaise
3 good dashes hot sauce
1/8 tsp garlic powder
2 cups very good shredded parmesan cheese.
Combine all the ingrediants and bake at 350 degrees until bubbly and slightly golden. Serve with blue corn tortilla chips or your favorite cracker
Chili Cream Cheese Dip:
1 can of you favorite chuncky chili with beans
1 8 oz pkg of cream cheese, softened
1 cup shredded sharp cheddar cheese
Chopped cilantro for garnish.
Spread cream cheese in bottom of pie pan and top with chili. Top chili with cheese and microwave until cheese is bubbly. Top with chopped cilantro and serve with tortilla chips
Another appetizer that I enjoy making is:
Sliced pepper salami
Cornichons
Cream Cheese with onion and chives
Spread slices of salami with cream cheese and place a small cornichon in the center. Secure with toothpick. If the cornichon is large, cut in half or quarter.
Fresh asparagas, crisp cooked wrapped in prosciutto
Sliced English cucumbers topped with cream cheese and smoked salmon with a sprig of dill to garnish.
Puff Pastry Delights:
1 sheet of puff pastry, defrosted and rolled out
1 container of black or green olive tapenade
1 container of goat cheese
Spread puff pastry with tapenade and top with goat cheese. Roll up and cut into slices. Bake on a greased baking sheet at 375 degrees until puffed and golden. Serve immediately.

sausage stuffed mushrooms, shrimp wrapped in bacon with horseradish spread down the back, mini chinese barbecued ribs, fried chicken drumsticks(from the wing) with sweet chili sauce, grilled slices of a France baguette,rubbed with garlic and then topped with chopped tomatoes(herbed and marinated), caponata on a toast, mini pizzas, mini burgers(look yahoo food for the recipe from Wolfgang Puck), chicken breast fill with pesto, rolled and wrapped in bacon, marinated carrots, marinated mushrooms(really simple, either empty them from the can, or fresh and put in slices of garlic from two cloves, 1 dried red pepper, thyme, oregano, and a little bit of balsamic vinegar). Place in a plastic container, close and shake for the next two days. Open and serve. Braised celery, snow pea pods, cauliflower , cherry tomatoes, broccoli served with a aioli sauce. Hummus with pita, parsley salad, eggplant salad with pita.

Ok these type of parties are my thing b/c we are Spanish, and love parties around Tapas.
Let's see last time we had.... Tortilla (mmm so good) google it. We made Chorizo <- basically you take it, slice it up and sautee in a little olive oil and garlic We made Gambas and Championes, basically it's mushrooms and shrimp sauteed in olive oil and tons of garlic... sooo good What else? We made Garbanzo Frito. folks love it...

Cheese, crackers and pepperoni.
Cream cheese mixed with a can of shrimp, covered with shrimp cocktail sauce, and served with crackers.
Meatballs cooked in a crockpot with grape jelly and a jar of chili.
