Cheese and crackers are also fattening! A small amount of peanut butter on Ritz is a good snack. Cheerios with skim or low fat milk is good. You can have a slight sprinkle of sugar if you insist. A handful of nuts. Walnuts are the best for you.
Have a few crackers with peanut butter spread thin and a half cup if cantaloupe chunks. Dill pickles. Goldfish pretzels. Snyders makes a salt free/fat free pretzel. They are actually quite good. Rice cakes. The caramel ones are delish! I get the mini ones. And the graham cracker sticks are yummy with a handful of seedless grapes. Those are some of my favorite snacks. Oh, and I am now hooked on a small apple cut up and eaten with a handful of Planter's peanuts. You can almost get the feel of a caramel apple withour the caramel! Popcorn is good, too. We get Pop Secret Light Butter but the 94% fat free is okay but a bit syrofoam-ish. For me the key is lots of chewing. Celery sticks with a tiny bit of peanut butter or cream cheese is good. The key to a good snack is to not over do it but just make it a taste of something you like while helping to keep you from having a low blood sugar incident.

Peanut butter in moderation isn't going to be anymore fattening than anything else. If peanut butter works to keep your blood sugars level you will probably consume fewer total calories by not having to eat to treat a low blood sugar.
Try other foods that have a combination of carbs and protein. Yogurt may work for you, or something like apples dipped in hummus.
A dietician can give you all sorts of ideas about good snacks to eat and can teach you how to read food labels so you can decide which fats are helpful to eat vs the types of fats that only add empty calories.

My son (15) is also on lantus and humalog. You might want to try something like carrots/celery dipped in lowfat dressing. Another good solution is the "100 calorie packs" of goodies they sell at every store under the sun. My son personally loves the sugar free 5 grams of carb ice cream bars. My boyfriend is on Lantus and Humolog as well. Before bed he does usually have a snack of toast and peanut butter (on high fiber Weight Watchers bread) or, baby carrots with a high protein dip. If you're worried about watching your weight you can get low(er) fat peanut butter, but keep in mind, the lower fat peanut butter has higher carb counts per serving. My step dad is diabetic too, and he usually has mozzarella cheese sticks or turkey keilbasa and cheddar before bed. Mostly it's mixing a protein with a high fiber carb. Have you considered celery and low fat or fat free cream cheese, or cream cheese and sugar free jelly on high fiber toast? There are a lot of tasty low carb, high protein snacks you can have. Mix it up. A lot of the online dieting sites now have an option if you are diabetic. You could sign up with ediets.com or sparkpeople.com to get ideas for snacks.
ALWAYS check with your doctor before making dramatic changes to your diet. Speak to your nutritionist or dietitian. If you don't have one, see about getting one.

Before bed snack, I give my son, peanut butter, and sugar free jelly flour tortilla, warmed spread 1 heaping teaspoon peanut butter and jelly and roll it up. and that seems to carry him through the night. My son is also on Lantus at night, and Novolog during the day.
