the difference, and what makes sushi in one place cheaper and the other is incredibly expensive

Freshness, type of fish (if it's fish), the part of the fish used (if it's fish), the quality of the rice, how much the rice is 'packed' (not over-packed and not fall apart as soon as you pick it up), and the overall temperature of the sushi all affect the quality of the sushi. Last but not least, the presentation of the sushi is also an integral part that a sushi is judged by.

As to price, factors include the restaurant's location (in town, out skirt, uptown, downtown, etc.), its chef's salary, how the restaurant is pitched (i.e. presenting itself as high class or casual), and of course the quality of the sushi and popularity of the restaurant.

Personally, I think sushi is a little over-rated. Don't get me wrong; I do like sushi a lot. But, I can't help but feel that if traditional English food involved a lot of formality, chefs all required special license separately for different things and dishes were pricy, people would start thinking how wonderfully natural English food tastes too. Just a little observation. No offense. I like Japanese food, just not the hype.

The sushi is high quality yet that avocado is the perpetrator with all those energy. try diverse Rolls that have not got the avocado. individually i admire the Rolls that have the Tabika eggs ( like Salmon eggs, purely actual small) Then for hours when you consume them you may suck out a tiny egg from between your enamel and crunch it jointly with your incisors and get a burst of style.

Quality of ingredients, freshness of fish, if the fish smells fishy, its not fresh, also the portion size for what you're paying.
