Sauce:
Olive oil
1 c. diced onion
2 t. minced garlic
1/4 t. crushed red pepper
1 fennel bulb, diced (approximately 1-1/2 cups)
1 28-oz can crushed tomatoes
1 orange, zest only
Salt & pepper
Optional: 1/4 c. cream
Small handful chopped parsley
Gently sauté the onion in a little oil until it softens, then add the garlic and crushed red peppers. Cook another few minutes, but don't let the garlic brown.
Add the fennel and stir. Cover and sweat till the fennel softens, about 10 minutes.
Add the tomatoes and orange zest. Simmer uncovered for about 15 minutes, then salt and pepper to taste. (If you're using cream, stir it in after about 10 minutes, then let the sauce continue to simmer another 5 minutes or so.)

I agree with the answerer who said to start with a can of Hunts tomato sauce. Best base to use. It's also good for making a nice bbq sauce. But that's for another topic :)
I ALWAYS use oregano, thyme, and basil in mine. About 1 tbs of each to a 15 oz can of tomato sauce (more to taste). I also put some salt and pepper in.
The rest varies based on what I have on hand, but often includes carmelized onions. Minced pretty small. Other good stuff I've used in off-the-cuff spaghetti sauces- ground turkey (cook it seperate first, and you can use the pan drippings to cook onions! same with other ground meats), mushroom bits, black olives, roasted garlic....thelist could go on.
Fennel should be good. Play with it. Make something up and see how it is. Just add stuff a little at a time until it tastes right to you.

Spaghetti Sauce Recipe
Easy Italian-Style Tomato Sauce
* 2 to 3 tablespoons olive oil
* 2 medium onions
* 1 medium green pepper, chopped
* 1 clove garlic, minced
* 1 tablespoon salt
* 1/4 teaspoon pepper
* 1 can (6 ounces) tomato paste
* 2 cans (14.5 ounces each) diced or crushed tomatoes
* 1 teaspoon dried leaf oregano
* 1/2 cup grated Parmesan cheese
Heat oil; sauté onions, pepper and garlic in the oil until tender. Add salt, pepper, tomato paste, tomatoes, and oregano. Simmer for 30 minutes, stirring occasionally. Stir in cheese before serving or serve cheese separately. Serve with hot cooked and drained spaghetti or similar pasta. Serves 6 to 8. Meat version: Sauté 1/2 pound of lean ground beef with the onions, peppers and garlic until browned. Proceed with recipe.

I like Sugarcandy's recipe, but I would add a bit of sugar while cooking the sauce (it takes the acidic flavor that often spaghetti sauces get)

Spaghetti resp....? my god man, that's like asking how many grains of sand there are on the beach.... I'll try... this works for me... I start with just basic Hunts tomato sauce... and it comes with "stuff"... Hunts sausage, etc.etc. very inexpensive too... get yourself a base... some chopp'd onion, some chopp'd bell pepper... some chopp'd garlic... Oregano... lots of chopp'd Oregano... make it to taste... in a pan... lightly saut'e the veggies... then some "good" ground beef and some ground pork... pork rules...grill it all up... mix it all in your sauce base...
taste it... add some romano or parmeasean cheese... cook it in.
It should be fairly "thick"... the amount of meet you put in will determine that..... no salt... you've got lots of it in already... if you want to "fire" it up a bit... add some Med Salsa or Hot salsa, not alot just some for "fire"... always... keep tasting your sauce to fine tue it to what YOU want... enjoy...but remember... add your spices and stuff carefully... once you put them in... you cant take them out... "in is in"...

When I make spaghetti I use PREGO spaghetti sauce (traditional flavor) or HUNTS (roasted garlic with onions). There both very good.
