Any recipes for non-spicy vegetarian meals?

i like pasta fagoli...its like an italian stew? its versatile you can put anything in it...we usually put northern beans, zucchini,tomatoes, pastina (or any mini pasta) green beans...cabbage and noodles is good...ummm veggie omelette...veggie corndogs are delish too

Baked Vegetables

Onion, squash, potatoes, green and red peppers
zucchini and mushrooms (I used canned)
olive oil, salt, pepper, garlic, italian seasoning

Slice the vegetables into slices, all about the same thickness. Coat the bottom of a baking pan with olive oil. Layer the veg into the pan, seasoning between layers. Drizzle a little oil between layers if you want. Cover with foil and bake at 350f for about 40 minutes, then take the foil off. Bake another 10-15 minutes, until the veg are tender enough to cut easily. You can top this with seasoned bread crumbs, if you like.

How is this: African Vegetable Stew- 1 very large onion chopped, 1 bunch of swiss chard, 1 can garbanzo beans, 1/2 cup raisens, 1/2 cup raw rice, 2 small sweet potatos, several fresh tomatos, 1 garlic clove, Salt and pepper to taste. Fry onion, garlic and white stems of chard until barely limp. Add chopped greens and fry a bit. Peel sweet potatos then slice them into thick slices. Add beans, raisens, sweet potatoes, tomatoes, salt and pepper. Cook a couple of minute. Make a well in the centre of mixture in the pot. Put the rice in the well and pat it down until it's wet. Cover and cook until rice is done. About 25 minutes.

Simple, easy and nourishing...
16 oz of water-5 Tablespoons of Quinoa (grain)
more water to make it thinner.
Add kale, chard, zucchinni, carrots, celery, tomatoes, etc.
Seasonings: Rosemary, sage, parsly,thyme.
You can also add 1 to 2 tablespoons of mung beans or rice
Bring to a boil and then cover on low for about an hour.
Season with Bragg's Amino Acid and salt to taste.
You can blend some of the vegetables to make the soup thicker.

1 lb. carrots, cooked, sliced
1 onion
1 bell pepper
1 can tomato sauce
3/4 c. sugar
1/2 c. white vinegar
1/2 c. oil
1 tsp. mustard

Refrigerate overnight after mixing.

Fetticini alfredo, pesto. All different types of salads and pasta. You could go nuts.
