It really depends on what dishes exactly are being considered, 'cus when you just say Chinese Vs Thai, you're comparing entire cuisines. As for soups, both Chinese and Thai soups are great, and healthy too. But for the most part I would prefer Chinese soup for health (there are many chinese herbal soups available) and Thai soups for a fiery indulgence like a solid Tom Yam soup (WooHoo!!)... Plus, there are variety of cooking styles in each cuisine: frying, boiling, stewing, stir-frying, grilling, roasting, etc, etc... So, the issues of which is healthier and which is more tasty really depends on what dish you are eating. And anyway, as far as food is concerned, to get the most benefits and taste out of it, it must be consumed in moderation 'cus too much of a good thing can also turn out bad. :-)

In theory, Thai food should be healthier than Chinese food because it contains less oil; however, there are dishes in which coconut milk is used -- those are not very healthy to eat a lot.
Anyway, from my experience, Thai people use spoon and fork -- not chopstick or knife and fork or hands.
The lettuce thing: how does it taste? It should be Pak Kad Hor sth... Perhaps you should ask the waiter for that question.
Also, be careful of spicy food. If it says so on the menu, then it is very spicy. If it does not say so, it is still spicy. Hope you enjoy Thai food. ^ ^

Healthier? Depends on what you order. Eat with your hands? No, you might be thinking Morraccon food? Thai food you'd eat with chopsticks or a fork... The wrap made with lettuce? ummm...a Lettuce wrap... Fresh spring rolls are great too, but they're wrapped with rice wrapper..
Try something like Pad Thai or Red Curry Chicken...Yummy!

Generally no Asian ever associate the word "healthy" when referring to Asian ethnic cuisine, be they Chinese, Indian, or Thai; only Westerners are concern about "healthy food".
I don't think the Thai people are healthier than the Chinese, or vice versa - so you can toss the "Thai-is-heathier" myth out of your mind. And most Thai food especially in fine-dine restaurant are eaten with the use of a fork and spoon; no knives, not hands. But if you prefer to use your hands for certain dishes, you're most welcome.

No we don't eat with our hands in the restaurant. It would be considered as rude and uncivilized. If you go to Thai restaurant, they will give you fork and spoon. It's very unusual to eat Thai food with chopsticks (that's chinese food). A lot of Thai food are cooked with coconut milk, chilli pepper and curry. There are other thai food that are healthy and not spicy at all. I guess it's all up to what you order. If you don't want spicy food, and enjoy noodle, then order "Pad-see-Ew". It's very good and my son loves it (not spicy at all). Pad Thai is also delicious and well known among non-Thais. My husband loves beef salad called "Yum-Nua" (eat it with steam white jasmine rice). If you order it, let the server knows how spicy you want. They can cater to your preference of the spicy-ness level. If you want unusual dish but well known among thais, then try squid or seafood salad. Again, the level of spicyness can be adjusted if you let the server know how you like it. Enjoy your dinner!! (And if it taste really good and you like it, then you can comment it to the server: Ah-roi-Jing-Jing (meaning: it tastes really good). And if you don't want it spicy then say " Mai-Ped ".

they use spices and coconut and stuff. Otherwise the cooking style is similar. Thai Vegetable noodles or something might be healthy but otherwise its relative to how healthy the chinese food you eat is and what you order in the thai restaurant.

It can be healthier depending on the quality of the ingredients, what you order and how it is prepared.
That said, Thai food uses a lot of coconut milk which is extremely high in saturated fat content.

It may be spicier. But there is no any special ritual as far as I know. Maybe there some of those special dishes that you eat with your hands, but just order something from the regular menu and use your chopsticks (or fork).
