any ideas for a vegetarian sandwich that is simple and doesn't evolve hard to find or expensive (I'm on tight budget) ingrediants? So far all I have is cucumber, tomato and chick peas...it's getting boring

chick peas you can make hummus with. Avocados are nice, they taste good when ripe and on whole wheat bread, its rly good. I like antipasti, which is raw vinaigrette veggies (you can make this by roasting veggies like bell pepper, eggplant, tomato, asparagus, zuchinni, squash anything, and tossing with vinigar or italian dressing) with cheese on a wrap or roll
I also like making my own veggie burgers

Heat stuff. Cheese melts are wonderful. Roast some red peppers, eggplant, zucchini; use them in sandwiches...

Putting your tomatoes on toast in a medium oven for +/- 20 min will make the tomatoes appealingly soft and warm without turning them to mush.

Onion, green pepper, and mushrooms sautéed in garlic butter go nicely on a bun with melted mozzarella.

Think deli and sub shop, and throw on pickles, hot peppers, a 'sub sauce'-type dressing (try an oil-and-vinegar salad dressing), thinly sliced onion, etc.

I am thoroughly bored with cream cheese + veg being the popular vegetarian sandwich, but apparently a lot of people aren't...

Alfalfa sprouts are still good. With red onion, tomatoes, cucumber, a wee bit of lettuce, ona whole-wheat bun...

Cheese and pickle is a classic.

The 'Greek-salad-on-bread' idea -- romaine, tomato, cucumber, feta, black olives, red onion -- on a pita, usually -- is pretty good.

This is one of my favorite sandwiches:

Tofu Reuben with Russian Dressing
Serves 4

* 1/2 lb extra-firm tofu, sliced lengthwise, 1/4 inch thick
* tamari soy sauce to taste

Russian Dressing
* 2 TB nayonnaise
* 2 tsp ketchup
* 2 tsp pickle relish (sweet or dill)
* 8 slices rye bread with seeds
* 2/3 cup sauerkraut, well drained(optional)
* 4 oz soy cheese of your choice, thinly sliced
* canola oil for oiling pan

Preheat oven to 350°F. Baked sliced, tamari-seasoned tofu in a pyrex pan (covered) for 25 minutes. Remove from oven.
To prepare the Russian Dressing combine the mayonnaise, ketchup and pickle relish in a small bowl.
Spread the Russian dressing over the inside of both slices of rye bread. Arrange the tofu slices over the dressing. Spread the sauerkraut evenly over the tofu. Top with the cheese and then with the remaining bread slice.
Heat a nonstick pan over medium heat. Lightly oil the pan. Place the sandwich in the pan, and put a plate on top of the sandwich. Hold the plate down with a can or a heavy saucepot, and press gently. Lower the heat, and cook the sandwich for four minutes, or until golden brown. Flip the sandwich over, and repeat the process until the sandwich is heated through and golden brown on both sides. Cut in half and serve immediately.

You can also make great sandwiches with Tofurkey. It tastes really great.

Most regular grocery stores have fake meats these days if you are interested. I personally like fake turkey, veganaise (mayo if you eat eggs), lettuce and tomato. Unless you are a vegetarian because you find these things disgusting, there is no reason you can't rely on old stand-byes.

If you are feeling saucy, you can make some veggie-bacon

and make BLT's for several days.

Buy whatever veggies are on sale and make a delicious sandwich pith pita and a flavored hummus.

when we were kids, we just piled on the tomatoes:

bread slice
mayo
cheese (pepperjack, sharp cheddar, swiss, feta)
2-3 thick tomato slices
pickles or cucumbers
ranch or italian dressing
ketchup
+/-mustard
lettuce or spinach leaves
onion
bread slice

you could add avocado slices or bean sprouts but i personally don't care for them
or radishes sliced up for a spicy taste
or wasabi for a really spicy taste
or shredded carrots
or olives if you're feeling Greek
or boiled egg (like egg salad)
or grilled veggies (eggplant, zucchini, other squashes)
or grilled tofu

Peanut butter
there are other nut butters
soy cheese
jelly
use other vegetables, sliced zuchini, or other squash, lettuce, other greens,
tahini and other grain spreads
sunflower butter
make a spread from ground dry fruits and ground chick peas or other protein source

Well when my family goes to subway i always get a veggie sandwich, healthy, and has no meat.. Ingredients: lettus, tomato, cucumber, peppers, and light mayo

Cucumber and Avacadoe Sandwich

put slices fo cucumber on avacadoe with bean sprout on wheat. it is very good

Hummus and Falafel sandwich

add hummus and fry up some falafel on your pan and add a little lettuce for taste. very yummy on pita.

Try thes one it's fruty and good.

16 oz. cream cheese (room temp.)
1 sm. jar cherries (drained well and
chopped)
6 to 8 tbsp. confectioner's sugar
1/2 c. chopped pecans

Mix cream cheese, cherries and pecans. Add confectioner's sugar to sweeten to taste. Spread on bread to make party sandwiches. Really pretty to make with red and green cherries.

I know you may like peanut butter but don't by peter pan because of the salmonella thing going on. Just want you to be safe. I do have ideas but they wouldn't be as good as the other ones. I need to start writing these down. yum!!!
