Buy a bunch of flour and corn tortillas and some salsa, guacamole, hot sauce, sour cream, lettuce, tomato, shredded cheese, etc.

Then - set up some skewers with one ingredient on each (one with green pepper, one with redpepper, onion, mushrooms, zucchini, chicken, beef, shrimp, etc.) after marinating them in a fajita seasoning sauce. Grill emp up and let people make their own - with or with out meat.

Congrats and good luck with the dinner

Does the fact that YOU are a vegetarian mean you cannot serve meat to your guests? For most people, tailgating involves some form of barbecue, and you can do wonderful, elegant and simple forms of shish-kebob (meat and fish and veggie) in the grill, with good marinade and dipping sauces.

For simple and unusual finger food, look to some of the great Philippine dishes - and a combination of fruit and chocolate for dessert is always a hit and again, easy to produce. Rich dark chocolate candies, fresh fruit and maybe dark brownies.

Good imported beer and wine with the meal, champagne or an asti with the dessert - you're a hit.

Meat eaters would be fine with vegetarian foods. I entertain alot and everything I make is vegetarian. No meat eater ever left hungry or unsatified.

For tailgating:

Marinated grilled veggie Kabobs
Morningstar farms hot dogs (people wont know the difference)
Packet potatoes
Pasta Salad
Cole slaw

Grill up some veggies (zucchini, summer squash, eggplant, roasted read peppers, portabella mushrooms), add some goat cheese, put on a nice bread (focaccia or ciabatta) and you'll have a nice sandwich.

Hummus, cheeses, chips, tapenade, and fresh fruit should round out the rest! And of course some tasty desserts!

Every year around here in Madison,WI, we have an event called BRATFEST and it is called the Biggest Bratfest in the world.

Each year they cook up both meat and meatless brats so everyone can eat what still tastes like a real brat. I hate to be the one to say it, but, I have lived here in Madison, WI all my life, and I still cannot tell the difference in the taste of meat or meatless brats.

In the DELI department in our local grocery store, there is Cole slaw (3 kinds), and potato salad (4-5 kinds).

Good Luck and CONGRATULATIONS!!!

Since it's a tail gate, you can have casual food. Vegetable pizza and artichoke dip are some ideas.
