If you have a slow-cooker, use it(or 6-8 hrs @ 300F). Don't forget the half-bottle (red is best) of wine. You can drink the other 1/2 with you meal. Chose a slightly fatty meat (lamb is good.... use mint, rosemary) so it won't be so dry. Any Vegs will do... carrott, onion, celery, potato.

My boyfriend loves when I make "Chicken Fettuccine Alfredo" and he has NO idea how unbelievably easy it is.
All it calls for is :
1 Pkg Fettuccine Noodles
Chicken Breast
1 Can of Campbell's Mushroom Soup
1/2 - 1 Can of milk
Shredded Parmesan Cheese
All you do is boil and drain the noodles. Mix in the soup and milk. Start with 1/2 cup and keep adding until it is at a consistency you like. It should be pretty thick. Add some garlic and pepper, the soup is pretty salty so you don't need to add any. Then add the cheese. I usually just keep adding and tasting if it gets to think I just add more milk. It's truley fool proof. Then cut the chicken into slices and pan fry it on a med heat with some olive oil garlic pepper and a little butter. Then you either mix the chicken in the noodles or put the pieces on top after you plate it. It's very pretty and REALLY good, personally I think it taste better than when you order it in most restaurants. My boyfriend loves and always thinks I put a lot of time and effort into the meal. It actually takes less than 30 mins, which frees up plenty of time to plan a great dessert. Good luck.

How about a stir fry. If you use beef or chicken, and slice it when it is partially frozen, you can get nice thin slivers. And if you don't want any meat in your share, it's easy to avoid.
If he likes cooking, you can chop the veggies together.... or just have them pre-chopped. I'd serve it over rice instead of noodles, because it's hard to be romantic and slurp noodles at the same time! A extra bonus is that it doesn't take long to cook, and there won't be many dishes.
There are lots of Asian frozen appetizers you can buy. And for dessert, I'd just have something that cleanses the palate like a sherbert. Or maybe a cheesecake for two. Or even a fancy coffee (like coffee and Grand Marnier with whipped cream).

Cheesy Salsa Chicken
8 boneless skinless chicken thighs
1 (10 ounce) can condensed cheddar cheese soup
1/2 cup salsa, I used mild but you can use any kind
Place chicken in crock pot.
Stir together soup and salsa and pour over top of chicken.
Set crock pot on high for 4 hours.
Serve with rice or noodles.

4 cups Wheat Chex® cereal
4 cups Cheerios® cereal
3 cups pretzel sticks
1 (12 ounce) can salted peanuts
1/4 cup butter or margarine, melted
2 tablespoons grated Parmesan cheese
1 teaspoon celery salt
1/2 teaspoon seasoned salt
DIRECTIONS
In a 5-qt. slow cooker, combine cereals, pretzels and peanuts. Combine butter, Parmesan cheese, celery salt and seasoned salt; drizzle over cereal mixture and mix well. Cover and cook on low for up to 3 hours, stirring every 30 minutes. Serve warm or at room temperature.

Keep it simple. Steak is always good. Serve it with steamed brocolli and a baked potato. Get fancy on the dessert.
If you prefer fish, go with a light fish and serve it with mango salsa. Serve it with aspargus with lemon and some excellent french or italian bread.
