I would try something simple, say Lasagna or spaghetti, a lettuce salad (pre packaged to save on time, just add your diced tomatoes, cucumbers etc), garlic bread/toast.
Below is a link to my fav. lasagna recipe, which can be made ahead and baked when you need it. I just add the top layer of cheese right before I bake it. I use Prego spaghetti sauce with onion/garlic (how romantic?) for the lasagna recipe, but am very happy with Hunts traditional spag sauce also. Add italian seasoning if you desire more flavor/spice.

A favorite easy dessert is fried ice cream. We take a scoop of vanilla ice cream shaped into a ball, roll it in crushed cinnamon toast crunch cereal, top it with caramel or butterscotch ice cream topping, and some ready whip whipped cream from a can for a pretty presentation. This is really delicious, simple to make, and you can put the ice cream balls rolled in cereal in the freezer until your ready to serve dessert, and then just add the toppings.
The less work the meal is, the more time you will have to chat & get to know each other better.

There is a great place I know of, and they may have a place near wherever you are. They have the best burgers and their fries are nice and crisp with a perfect amount of salt. For dessert you can choose from a "Frosty" or apple pie. The place is called WENDY'S...yes fast food. Look buddy dont try to impress her with some fake fancy dinner. if you really want her to like you then make like you for who you are on the inside. If a junior bacon cheeseburger turns her away then she is definitly not the right person. If she truly liked you she would order a double junior bacon cheeseburger.

Spicy Roasted Potatoes
'I came up with this recipe when I had some leftover taco seasoning mix. I used it to spice up oven fries...and they were an immediate hit!
INGREDIENTS
3 medium red potatoes, cut in 1-inch pieces
1 tablespoon taco seasoning
1 tablespoon canola oil
DIRECTIONS
In a large resealable plastic bag, combine all ingredients; shake to coat. Place potatoes in a 9-in. square baking pan coated with nonstick cooking spray. Bake, uncovered, at 450 degrees F for 25-30 minutes or until tender, stirring once.

super easy and impressive:
pre-washed baby lettuce tossed with balsamic dressing (all can be purchased ready to go at the grocery store)
crusty bread sliced open in the middle - spread with store bought pesto sauce and bake in a 400 degree oven for 10 minutes until just starting to brown.
cook some bowtie pasta. mix the hot pasta with a 1/2 cup of the pasta cooking water, 1 container of ricotta cheese, a handful of parmesan, the juice of a lemon, salt and pepper, chopped fresh herbs like mint, tarragon, basil or oregano (or a mix)
it makes a light, easy 'alfredo' type sauce that requires no additional cooking.
and get two chocolate cupcakes for dessert.

Chicken parmesan with white wine or zinfandel. Easy to make, looks good, hard to mess up, not so expensive or labor intensive. Don't forget two long, tapered yellow candles!
