Does anyone know how to make magdoose? I only need the recipe for the magdoose itself, not the addition like vegetables etc. I need the recipe for the nuts, garlic and redpepper part..Thank you...

Magdoose is different than Imam bayildi.... Magdoose is pickled eggplant...... this is a recipe that I use:

for 1 Kg of small eggplants (Long, slender eggplant -- such as the Japanese variety ) you will need:
4 Tablespoons crushed garlic
4 Tablespoons minced red hot chilli peppers!
2 Tablespoons coarse (sea) salt
Crushed roasted Nuts (to taste)

1- wash the eggplants and take of the top green part without cutting the tip.
2- make a slit in the side of the eggplant as if you would when making a sandwich... make sure you don't slit all the way through.
3- boil the eggplant for a while (to cook but without getting tender)
4- arrange in a seive slit side down and press down with a dish and add some weight on top and leave it overnight.
5- stuff the eggplants with the mixture (garlic, pepper, salt and nuts) and arrange in a non plastic container..(preferably a big jar) and cover the eggplants with oil put on the lid of the container and leave it for six days.

Love it -- but I'd follow an eggplant to hell. However, no such fear if you stay close to the Imam! Forget the virgins, gimme Imam Bayildi. (see below)
