Can anyone point me in the direction of any literature that has him directly quoted as being a vegetarian?

No, Larry Bird is not a vegetarian. The confusion lies in that Bird was quoted in Esquire magazine stating that he had quit hunting because he "didn't want to kill anything anymore." So, animal rights publications highlight that fact. But there is no evidence that he actually gave up eating meat.

Not that I know of. You may be confusing him with basketball legend Bill Walton who is in fact a vegetarian and environmentalist. He was often called a hippy because of his long orange hair, thick jawline beard, the colorful shirts he wore, and the fact that he drove a VW Beetle regarless to he fact that he's 6'11" and can barely fit in it.

Well, I remember him making those 'Beef, that's whats for dinner' commercials in the 90s so I am going to guess that he isn't.
