How about mashed potatoes with:
Butter
A dash of sour cream
Chopped green onion
Bacon bits
Cheddar cheese
Chunks of ham
Salt & Pepper

Mix everything together except the Cheddar cheese and Bacon bits. Place those two ingredients on the very top and put it in the oven until the cheese melts.

This is a scruptuous side dish.

Cauliflower Gratin
1 (3-pound) head cauliflower, cut into large florets
Kosher salt
4 tablespoons (1/2 stick) unsalted butter, divided
3 tablespoons all-purpose flour
2 cups hot milk
1/2 teaspoon freshly ground black pepper
1/4 teaspoon grated nutmeg
3/4 cup freshly grated Gruyere, divided
1/2 cup freshly grated Parmesan
1/4 cup fresh bread crumbs
Preheat the oven to 375 degrees F.
Cook the cauliflower florets in a large pot of boiling salted water for 5 to 6 minutes, until tender but still firm. Drain.
Meanwhile, melt 2 tablespoons of the butter in a medium saucepan over low heat. Add the flour, stirring constantly with a wooden spoon for 2 minutes. Pour the hot milk into the butter-flour mixture and stir until it comes to a boil. Boil, whisking constantly, for 1 minute, or until thickened. Off the heat, add 1 teaspoon of salt, the pepper, nutmeg, 1/2 cup of the Gruyere, and the Parmesan.
Pour 1/3 of the sauce on the bottom of an 8 by 11 by 2-inch baking dish. Place the drained cauliflower on top and then spread the rest of the sauce evenly on top. Combine the bread crumbs with the remaining 1/4 cup of Gruyere and sprinkle on top. Melt the remaining 2 tablespoons of butter and drizzle over the gratin. Sprinkle with salt and pepper. Bake for 25 to 30 minutes, until the top is browned. Serve hot or at room temperature.

I got a real good one. You need about 2hours for it though..but its good.

Get a bunch of uncooked ground beef and cut up onions put in salt and oregano and whatever seasoning u like. put foil paper on table and make the beef into a round pizza shape. Add the following ingredients in the middle (centre in a long row horizontally)add 1 potato cooked sliced, 4 sliced cooked eggs, frozen vegetables. Then fold on side in and then the other side in, tighlty close so that everythin is inside and all sides are closed shut --even the outer sides. It should llok like a big long sausage. Rapit up in the foil really tight no open ness..punch some holes on the top. put in 350 oven for 1.5 hours , then lower to 250 for half an hour and stick your knife in the foil and if no blood comes out its ready and delicious.. Cut into slices..like meatloaf

Best thing is to ask the host(ess) Next best is to consider the theme or feel of the dinner, and what kind of people will be there, what they will like. Healthy? Indulgent? Adventurous? Allergic? Then you can cruise the internet or the library for recipies. Or, if you don't have time, just go to the best baker you know and buy a big honkin' cheese cake.
