1. (frenchish) roasted beets, sliced onion, mandarin orange segments, bleu cheese with balsamic vinagrette (balsamic vinegar, honey, mustard, salt and pepper, olive oil)
2. (greek) feta cheese, chunks of tomato/cucumber/green pepper and parsley with lemon juice, oregano and olive oil
3. (kinda indian) chick peas or other beans, cucumber, carrot, celery, peppers and balsamic vinagrette with cumin
4. (asian) scallion, jullianne (super thin sticks) of carrot, celery, cucumber, onion, snap peas, bean sprouts in a vinagrette of honey, sesame oil, rice vinegar, soy sauce and vegetable oil.
5. (perfect light cole slawish) shredded cabbage with carrot and onion with a honey, mustard and rice vinegar dressing.
6. (mexican) big chunks of avocado, tomato, onion, cilantro, and iceberg lettuce with lime juice, olive oil, salt and pepper
i highly recommend making a few medium size batches of dressings to have for a few days at a time or buying a few healthy favorites to have on hand.
investing in good interesting pantry ingredients like spices, dressings, oils, vinegars, etc makes it so much easier to make it interesting.
and cubes of cheese, canned artichoke hearts, sundried tomtoes, roasted peppers, canned beans, canned fruit, etc are great things to add to simple salads - and you can keep them for much longer than fresh produce.

Not being a 'Veggie', if I do a vegetarian salad it's actually just carrot, 'julienned'.
Then make your own dressing - or start with a commercial one and dress it up.
Just microwave the carrot strips for 30 seconds or so in some orange or lemon/lime juice, drain and cool. (I have used honey, instead, makes it sweet and offsets the tart dressing - I like vinegar.)
Add the dressing and chill.
I like oil, vinegar and a touch of English Mustard, or a bit more French/American Mustard.
Crushed peppercorns (any colour) or wholegrain mustard can be used instead of mustard powder/prepared mustard.
It's always popular with people - but I serve a 'normal' salad of lettuce and other stuff, as well.
I've tried chillis, as well. I liked it, but others were'nt so keen.

I really like Ceasar salad, and here, they make these little shakers called "Salad Toppers" I'm not sure who makes them exactly, but they have a red cap, and they have like, seasame seeds and spices, they are really good on a salad. I also like the fake bacon...I think the kind I have are called Bac-O's? They taste JUST like bacon, and I can sit and eat them all day without feeling guilty! It's great. Hope this helps.

Get some iceburg lettus that is mixed with all kinds of veggies, get some croutons, and some sunflower seeds, and peanuts or which ever you prefer,slice up some cheese or your choice, slice up some ham, mix them all together, use some dressing of your preference and there you would have a wonderful, and beautiful chef salad!

Baby arugula, pepitas (roasted salted pumpkin seeds, no shell- Trader Joe's sells them) and chunks of ripe avocado. Dress with Newman's Own Raspberry Walnut Vinaigrette.

my favorite salad is called italian citrus salad. made on made of a base of a romaine/spinach mixture or any mix you prefer (you can't mess up this one). mix together your favorite salsa with wishbone italian citrus dressing (found in large grocery stores) then marinate chopped olives, green onion, sliced almonds, kidney beans (drained) in salsa/dressing mixture until ready to serve. all ingredients are measured to taste. for presentation use tortilla chips around the salad bowl and top greens with the wet mixture. use chips to eat the deluctentation. this is a party fave!

You should have cucumber, tomato, etc. And/or peas, little bits of capsicum (all colours), feta/goat's cheese if you want, carrots, olives, tofu, nuts, even raisins. Add lime juice, olive oil, boiled eggs, mushroom, sprouts, soya sauce, pepper - and "chaat masala!

add avocado, cheese (or fake cheese) olives, bell pepper banana peppers, mandarin oranges, apples (even in a regular salad) sunflower seeds, croûtons, raw zucchini, skies the limit :)
