I took my blood glucose 1 hour after eating and it was 259mg. My 2 hour was 152mg. I understand my 259 was only after one hour, but I read that healthy people should not go above 110, or 120 or 140 after a meal.

My meal was small with a small portion of potatoes. I need a little carbs or else I get the shakes. It is so difficult knowing how your body will react to specific foods.

TWO HOURS AFTERWARDS you should be UNDER 120..if you are NOT diabetic.....normal blood glucose is .. 70-110. If your sugar went to 259...honestly .. a non diabetic can not and should not go to 259 EVER.. you ARE pre-diabetic..if not.. in need of a diagnosis.. for now...LIMIT your carbs and sugar intake.

your two hour post meal should be under 180, though many recommend tighter control at under 160.
Remember the carbs hit your blood sugar within two hours of eating and the more refined carbohydrates raise your sugar more quickly. You should have a small portion of carbohydrate, most people eat around 45-60 gm per meal but that will differ with your weight, exercise and medications. It is is important to eat a balanced meal because protein will be absorbed and affect your sugar 2-4 hours after a meal and fat is anywhere from 3-12 hours. (that is why when you eat chinese food or a fishermans platter that is high fat, your sugars ar ehigh the next morning!)
So, try to choose carbs higher in fiber at a meal to help slow absorption, balance the meal with protein and fat and if your sugar is high post meal, walk a bit.

Diabetic or not, EVERYONE'S blood sugar rises after eating. Depending on what that person ate, depends on how high the sugars went. If you eat nothing but sugared foods, your sugars will be higher than if you ate a plate of veggies (although potatoes do raise the blood sugars more than green beans will). If you did not take any medication (oral or injection), you probably don't have to worry about taking any. 152 is not a bad level 2 hours after eating. Some days I would love to see that number. :) If you did take any medication, it is working pretty good. If you want more control, talk to your doctor about increasing the dosage. But again, the numbers are pretty good.
