Egg white is protein. It is mostly albumen, a type of protein. When you cook it you denature the protein,a chemical change, that is why it turns white.

Yes... it's all protein. It's actually very healthy because it's one of the easiest proteins to digest, and it has no fat or cholesterol (the yolk has all the cholesterol in the egg).
